Granola Parfait Recipe (with Jackfruit and Mangosteen)
Granola parfaits are usually made of layers of fruit, a dairy product and granola. The key is to balance the different textures of the various elements. As is true of almost any recipe, the quality of the ingredients plays a huge role in the end product. I got a bag of “Plain Jane” granola from Sarah over at Nuts About Granola (www.nutsaboutgranola.com), and it's incredible, so that part of equation was taken care of.
To contrast the peanut and cinnamon flavored granola, I gave the recipe a tropical Asian twist by using fresh mangosteens and jackfruit. They were naturally sweet so no additional sugar was necessary. Canned fruit would also work fine. I also decided to use fromage blanc in place of the more common yogurt. Fromage blanc literally translates to "white cheese". It's widely available in France and I'm lucky to be able to buy it at my local market. The consistency is similar to soft, healthier cream cheese. I sweetened it with a little stevia and honey.
Whether you want to serve it for breakfast or as a snack, this delicious treat will satisfy your sweet tooth! And if you’re curious to try Plain Jane granola for yourself, Sarah and Pham Fatale have put together a giveaway this week. Just click the like button below and you’re entered in the contest! Granola Marshmallow Treat Recipe (+ Giveaway)
I think I've said it on numerous occasions; our family has a sweet tooth (can an entire family share one tooth?). We always have sugary snacks available on the kitchen counter. One of the girls’ favorites are Rice Krispies treats, but today since I had a bag of granola on hand, I decided to substitute the granola in place of the puffed rice. The granola is called “College Staple”, and I got it from Sarah at Nuts About Granola. It’s similar to her “Plain Jane” product, but with dried cranberries. It’s almost like a peanut butter and jelly sandwich in granola form. The texture is not crunchy and rather tastes similar to a chewy cookie, which is perfect for the consistency of the marshmallow treats.
The best part of these sweet treats is that they're one of the easiest treats to make. It took me less than 10 minutes to make them. I also added chocolate-covered sunflower seeds; they paired wonderfully with the dried cranberries in the College Staple granola. Don't forget to enter our giveaway!

Fruit and Yogurt Parfait Recipe (Grapes and Granola Parfait)
Fruit and yogurt parfaits are a great breakfast food or late-night snack. They’re very filling and are easy to make. You can use pretty much any fruit you have on hand. For this particular parfait, I used Kyoho grapes. The sweetness, meaty flesh and softness of the fruit contrast well with the crunchy granola. I added Concord grape jelly to repeat the same flavor and condensed milk to give the yogurt a velvety texture.
The result is a tasty, yet still healthy treat. I can't get enough of it. We're stilling make our own yogurt weekly, and the girls just helped me make granola last weekend, but we're already running our of both. Our family is addicted!
