Baby Bella Mushroom Tart Recipe

Making savory tarts doesn't require a specific recipe. The basic dish consists of a puff pastry shell filled with your favorite mixture and topped with vegetables. I had Baby Bella mushrooms on hand, so I made a version using them along with an artichoke pesto.

The pesto is a combination of artichoke hearts, lemon, garlic, pine nuts and olive oil. To soften the pesto, I added mascarpone cheese. I topped the tart with the Baby Bella mushrooms and roasted red bell peppers. Cheddar cheese was the finishing touch so the filling formed one piece.

Beef Pasta Sauce Recipe

Making delicious pasta is fairly easy; however it requires a few little tricks to ensure that the dish always turns beautifully. The pasta sauce is one of the key components. Today, I used ground beef, fresh ripe tomatoes, grilled zucchini, eggplant, Portobello mushrooms, a sprinkle of Parmesan cheese and fresh oregano. I bound all the ingredients together using pasta water.

This pasta dish is unpretentious, tasty and oh so simple.

Portobello Mushroom Blue Cheese Tart Recipe Recipe

Most of the time, I have puff pastry in the freezer. That means that when I’m in a pinch, as I was today, I can always whip up a light meal with a few vegetables and make a savory tart. This time around I made a caramelized onion and fennel filling, topped with sliced grilled Portobello mushrooms and blue cheese. I paired the individual tarts with mixed greens and a simple vinaigrette.

Sunny days are back, so I tend to prepare easy, lighter meals like this one and a lot of cooling drinks to fight off the heat. Who wants to be stuck in a hot kitchen when the weather is this nice?

Bow Tie Pasta in Asparagus Sauce Recipe

Our whole family,  especially the little ones, loves bow tie pasta. The cute shape isn't the best way to hold on to sauce, but it’s a welcome change ffrom macaroni or penne. This time, I sautéed the pasta with caramelized onions and spinach and added a few other ingredients. I used grilled Portobello mushrooms for a meaty texture, diced red bell peppers for color and fresh mozzarella for extra creaminess.

The asparagus sauce is an improvisation using leftover asparagus stalks (I used the tips for making risotto). I blended them into a thick sauce and separately cooked onions with diced tomatoes, a few spices and yogurt. The sauce is quite healthy but so flavorful. If you're minding calories, you could omit the mozzarella garnish or use a low-calorie cheese such as feta cheese.

Stuffed Portobello Mushroom Recipe Recipe

Portobello mushrooms make an excellent main course for vegetarians. The mushrooms are quite large and provide good portions for a meal, they have a meaty texture and they're very flavorful, especially when they're grilled. What's not to love?

To make this entrée, I filled the mushrooms with rice mixed with black beans. A sprinkle of Irish cheddar cheese completes the dish. I'm not a vegetarian, and this is one of those rare vegetarian meals (along with fake chicken and sunken fried tofu) I truly enjoy without having the urge of adding meat. You won't miss it either!
