Poha Chudva Recipe (Indian Puffed Rice Trail Mix) Recipe

I was flipping through past recipes on PhamFatale and realized that while I published the picture, I didn’t share the recipe for poha chudva. The difference in this recipe from other chudva recipes is the addition of rich and creamy Brazil nuts. I deep-fried them with other nuts and mixed them with homemade-puffed rice called "poha". It's a great fusion South American and Indian rice trail mix flavored with many Indian spices.

I didn’t make the snack too spicy so the little ones could enjoy it too. We made several batches and packed them in cute Chinese takeout boxes for sharing.

Coconut Curry Tofu Recipe

I haven't cooked any tofu dishes for my husband Lulu in a while and I thought it would be good to vary his diet. So I prepared tofu with fresh wood ear mushrooms, sweet potatoes, carrots and red bell peppers that I stir-fried in coconut, galangal and turmeric curry sauce.

I topped the tofu dish with a few roasted peanuts to create a contrast in texture and make the dish more fun.

Peanut Chicken Satay Recipe

Peanut sauce is always well appreciated. It's tasty, very easy to make and can be served with many different ingredients. Chicken Satay is a classic, and for this recipe I marinated the chicken and prepared the components of the dish in advance for a truly easy meal. The peanut sauce was made from scratch with peanuts that I blended until smooth and creamy, coconut milk, galangal, limes and fresh lemongrass.

For more texture, I added fried jiacama and fried tofu to the chicken breasts. I served the chicken satay with steamed jasmine rice, sliced cucumbers and chopped tomatoes.

Sweet Peanut Nugget Recipe

If you're an Asian food aficionado and walk your way through the blogosphere, you've probably heard of Bee from RasaMalaysia.com. As we speak, Bee is in Malaysia with her adorable 15-month-old baby boy, visiting relatives, celebrating the Year of the Dragon. Since it's the Asian new year today, Bee is sharing with us her peanut nugget recipe from her cookbook, which has over 80 recipes perfect for the upcoming Lunar New Year. Legend has it that in ancient China, the dessert would be served by the family of a single woman to the potential groom to signify the beginning of a sweet and happy marriage. I am not sure about the truth of this tale, but I am sure you will love this easy recipe that is both addictive and delicious.

Salmon Tortilla Pinwheel Appetizers Recipe

Salmon wasabi pinwheels are super easy to make. I prepared wasabi and dill-flavored cream cheese in advance and stored them in the refrigerator until dinner time. The assembling part is so simple a child could roll them. In fact, that’s exactly what we did. I let the kids prepare the rolls and then slice them into bite-sized pieces. We secured the cute appetizers with fancy hors d'oeuvre picks.

For those who can tolerate a little bit of heat, I topped the appetizers with wasabi flavored peanuts to repeat the same flavors from the filling. My husband Lulu brought them back from a recent trip to Texas. Lulu knows what a foodie I am so he always tries to find new products for me to experiment with. It’s not all that altruistic though, since he’s usually the beneficiary of these creations. Don’t I have the sweetest husband?
