Pumpkin Banana Cupcake Recipe

11.25.14 by Jackie

Little Aria asked to see one of her favorite classmates, Colin, on a playdate. Aria can be very detail-oriented and asked if we could prepare mini cupcakes for the occasion. To make the sweet treat a lot more playful for the children, I topped the cupcakes with icing and sugar cookie letters.

The cake part is made with mashed bananas and pumpkin and I used an alphabet cookie cutter set. Aria helped out all through the baking process and she loved it. Colin loved the cupcakes too, and I was amazed to see he knew his alphabet as well. Isn't it impressive at only the tender age of three? It was so precious to watch them have so much fun!

I'm planning to bake the same larger-version cupcakes on Thursday

Banana French Toast Cupcake Recipe Recipe

Pain perdu (French toast) is my way to save day-old bread but today I added a twist to my plain recipe. I turned it into pain perdu cupcakes and flavored them with bananas and figs. To give them a unique flavoring, I used fennel seeds, which pair incredibly well with the ripe fruits.

I'm preparing for an upcoming food project these days (I'll tell you more about it soon) that requires focusing on bread, so we end up with loads of untouched baguettes. Given my aversion to waste, this dessert hits the spot. Pain perdu literally translates to "lost bread” and I can assure you that none of it was lost!

Lemon Mini Cupcake Recipe

03.28.14 by Jackie

We're hosting a casual gathering with family friends today. I think cupcakes are the best ending to such an evening. I prepared butter-y mini-cupcakes made with a very light lemon-flavored genoise cake batter. To reinforce the flavor, I topped the cupcakes with lemon cream cheese frosting.

I love serving and eating cupcakes. You can make them for any occasion and they're an informal way to end a meal or to enjoy just as a snack.

Thanksgiving Cupcakes

11.23.11 by Jackie

Cupcakes are a convenient way to serve dessert when you have a large crowd to entertain, say for Thanksgiving. Instead of making traditional Thanksgiving pies, consider preparing cupcakes flavored with pumpkin and chocolate. I frosted these cupcakes with pumpkin buttercream and topped them with cute turkey-themed peel-&-press edible frosting stickers.

I received the stickers from Ticings®. If you’d like to get your hands on some of their holiday-themed decorations to spruce up your baked goods, check out www.ticings.com. We’ll also be giving away Ticings® decorations, along with more than $1,000-worth of merchandise from other companies to PhamFatale readers during our 25 Days of Giveaways in December. Be sure to check back daily to participate!

Banana Cupcakes with Cream Cheese Frosting Recipe

Baking banana cupcakes is my way of using the ripe bananas that have been sitting in our fruit bowl. Our family eats a lot of bananas but I think this week we went a little over-board, so we had some leftover that were turning black. I mashed the bananas with a little lemon juice and used it as a flavoring for cupcakes. I added crème fraîche (you could use sour cream) so the cake batter was very moist.

I frosted the cupcakes with cream cheese frosting and decorated them with sprinkles I recently bought at Target. Easter is coming soon, so why not prepare some cute sweet treats!
