Brussels Sprout Pasta Recipe

Now that the election is over, we can turn our sights to something that everyone can agree on: making delicious Thanksgiving food! But in food, as in politics, you can’t escape partisan ideology, and I find that people have a love or hate reaction to Brussels sprouts. That’s unfortunate, because even though green beans and collard greens are part of many people’s Thanksgiving tradition, I think that Brussels sprouts deserve consideration as well.

One way to get people to feel more comfortable with an ingredient they may not love is to dress it up with universally liked flavors. In this dish, I combined seared Brussels sprouts with garlic pesto pasta. The mild sweetness enhances and reinforces the garlicky goodness of the pesto. It’s familiar enough to make everyone at your dinner table smile. It also sneaks in some greens, which I think is really important on carb-heavy Thanksgiving.

Brussels Sprouts with Chestnuts

My husband Lulu and I are leaving our baby with her grandparents tomorrow and will visit Brussels, Belgium. To mark the occasion, I cooked Brussels sprouts with châtaignes pelées au feu (peeled, fire-roasted peeled chestnuts). Sautéed with shallots in butter, Brussels sprouts have a starchy texture similar to the chataignes and make a wonderful side dish.

For added color, I added sun-dried tomatoes.

Roasted Brussels Sprout Tart Recipe Recipe

The preparation of this roasted Brussels sprouts tart may seem a little tedious, but with a little organization, you'll be able to do it in a breeze. In the morning, I roasted the Brussels sprouts along with red onions and bell peppers. I blended them into a thick paste with fromage blanc and Asiago cheese. An hour before dinner, I pre-cooked the tart shells. When it was finally dinner time, I placed the filling and topped that tartlets with whole roasted Brussels sprouts I previously warmed up. 

If you serve a large vegetarian crowd, a simple salad filled with nuts (for added protein) will suffice to complete the meal. Otherwise, you could also accompany the savory tarts with chicken in creamy mustard sauce (that was the alternative choice for dinner). Bon appétit!

Boiled Brussels Sprouts with Grapefruit Salad Dressing Recipe

Cooking Brussel sprouts can be a chore, especially if you roast them. So today since I was running out of time, I simply boiled and mixed them warm with a grapefruit salad dressing. For garnish I added freshly-cut grapefruit segments and sunflower seeds.

Boiled vegetables can be delicious if seasoned and paired with a flavorful sauce. Just look for a few fresh, complementary ingredients before deciding on a particular flavor route.

Balsamic Brussels Sprouts with Acorn Squash Recipe

Every winter season, I look forward to the wide availability of Brussels sprouts and acorn squash. I prepare them many different ways, but I make it a point to never overwhelm the distinct flavors of these seasonal veggies.

This time around, I steamed the vegetables until tender, then sautéed them in a little butter until caramelized. Finally, I glazed them in balsamic-maple syrup. The children love this dish because of its intriguing flavors; the sweet, tart and savory notes with a hint of maple in the background got very positive reviews.
