Roasted Carrot and Brussels Sprout Pasta Recipe Recipe

There are many ways of preparing Brussels sprouts. My favorite is probably roasting them but this can take a long time. This is a different approach with 3 steps: boiling, roasting and sautéing the vegetable. To add extra sweetness I cooked them with baby carrots.

I combined the carrots and Brussels sprouts with pasta, which is a great strategy for tempting my little one to eat healthy, nutritious food. The pasta sauce consisted of simple tomato sauce, Pecorino cheese and a bit of almond butter for extra protein. Voilà!

Now that the election is over, we can turn our sights to something that everyone can agree on: making delicious Thanksgiving food! But in food, as in politics, you can’t escape partisan ideology, and I find that people have a love or hate reaction to Brussels sprouts. That’s unfortunate, because even though green beans and collard greens are part of many people’s Thanksgiving tradition, I think that Brussels sprouts deserve consideration as well.

One way to get people to feel more comfortable with an ingredient they may not love is to dress it up with universally liked flavors. In this dish, I combined seared Brussels sprouts with garlic pesto pasta. The mild sweetness enhances and reinforces the garlicky goodness of the pesto. It’s familiar enough to make everyone at your dinner table smile. It also sneaks in some greens, which I think is really important on carb-heavy Thanksgiving.

Brussels Sprouts with Chestnuts

My husband Lulu and I are leaving our baby with her grandparents tomorrow and will visit Brussels, Belgium. To mark the occasion, I cooked Brussels sprouts with châtaignes pelées au feu (peeled, fire-roasted peeled chestnuts). Sautéed with shallots in butter, Brussels sprouts have a starchy texture similar to the chataignes and make a wonderful side dish.

For added color, I added sun-dried tomatoes.

Balsamic Brussels Sprouts with Acorn Squash Recipe

Every winter season, I look forward to the wide availability of Brussels sprouts and acorn squash. I prepare them many different ways, but I make it a point to never overwhelm the distinct flavors of these seasonal veggies.

This time around, I steamed the vegetables until tender, then sautéed them in a little butter until caramelized. Finally, I glazed them in balsamic-maple syrup. The children love this dish because of its intriguing flavors; the sweet, tart and savory notes with a hint of maple in the background got very positive reviews.

Braised Brussels Sprouts

Brussels sprouts are a delicious winter vegetable that can be cooked in many ways (roasted, boiled, grilled or braised). For this recipe, I first boiled them, then braised them in apple cider vinegar and honey and mixed them with tarragon-infused caramelized onions.

The dish is quite filling, yet healthy. I love these miniature cabbages and as their name indicates, they originated in the capital of Belgium (hence the name). So they are spelled Brussels sprouts, not Brussel sprouts, Brussel's sprouts or Brussels' sprouts. Regardless of how you spell them, they are yummy!
