Granola Parfait Recipe (with Jackfruit and Mangosteen) Recipe

Granola parfaits are usually made of layers of fruit, a dairy product and granola. The key is to balance the different textures of the various elements. As is true of almost any recipe, the quality of the ingredients plays a huge role in the end product. I got a bag of “Plain Jane” granola from Sarah over at Nuts About Granola (www.nutsaboutgranola.com), and it's incredible, so that part of equation was taken care of.

To contrast the peanut and cinnamon flavored granola, I gave the recipe a tropical Asian twist by using fresh mangosteens and jackfruit. They were naturally sweet so no additional sugar was necessary. Canned fruit would also work fine. I also decided to use fromage blanc in place of the more common yogurt. Fromage blanc literally translates to "white cheese". It's widely available in France and I'm lucky to be able to buy it at my local market. The consistency is similar to soft, healthier cream cheese. I sweetened it with a little stevia and honey.

Whether you want to serve it for breakfast or as a snack, this delicious treat will satisfy your sweet tooth! And if you’re curious to try Plain Jane granola for yourself, Sarah and Pham Fatale have put together a giveaway this week. Just click the like button below and you’re entered in the contest! Gluten Free Cheesecake Parfait Recipe Recipe

It's National Cheesecake Day this weekend and, though I’ve made many cheesecakes in the past, my goal was to put a new twist on the special dessert. Since we were invited to our friend Carol's home (she’s gluten intolerant), I decided to make my cheesecake gluten-free.

I made the mousse egg-free and flavored it with both raspberries and strawberries. For a contrast in texture, I added a layer of crunchy, diced yellow nectarines. And to make it look more fun, I topped the dessert cups with pistachio-flavored whipped cream and crushed pistachios. I don’t think anyone missed the crust. For those who could eat gluten, I slipped a ladyfinger cookie into the verrine. How amazing does that sound?

Eggplant Rollatini Recipe Recipe

Eggplant Rollatini Recipe

12.06.10 by Jackie

Eggplant rollatini (rolled and baked eggplant) is one of our family's favorite dishes. It is basically a twist on eggplant parmesan, minus the breading and frying. Grilled sliced of eggplant are rolled and filled with fromage blanc, then baked in tomato sauce. Eggplant is a vegetarian's delight; the thick slices of eggplant provide a meaty texture, while the fromage blanc supplies a luscious, creamy filling that contrasts with the crunch of the almonds.

The dish takes quite a bit of time to make, but your hard work will definitely be rewarded. It is ideal if you're searching for a great comfort food recipe.

Potato Blini with Quinoa and Smoked Salmon Recipe

Potato blini appetizers would make an attractive addition on any Thanksgiving table. The true beauty of this dish, though, is its flavor. Atop each potato blin I placed a generous portion of quinoa, a caviar look-alike, which I mixed with homemade tapenade for added flavor. I topped the mixture with a dollop of crème fraîche, a piece of smoked salmon (optional) and garnished the little bites with dill.

Unlike cutlets (Indian version of the potato bite), potato blini contain eggs and flour (no bread), so the appetizers don't fall apart when your guests pick them up. The result is an edible piece of art that is almost too pretty for your guests to eat.

Stuffed Mushroom Recipe Recipe

Stuffed Mushroom Recipe

11.03.10 by Jackie

Making stuffed mushrooms is a great way to put stale bread to use. I served soup the other night and we had 2 leftover rolls, so I decided to make a plate of these savory treats. To start, I sautéed a few vegetables, including zucchini, bell peppers, celery and carrots. You can use whatever you want, but it's a good idea to choose colorful ingredients. Once the vegetables were cooked, I added the bread, a little vegetable broth and fromage blanc. In case you were wondering, the fromage blanc helps keep the top moist even after the stuffed mushrooms are baked. To complete the dish, I topped the mushrooms with sharp Cheddar cheese.

I didn't add any additional spices, because the bread was already studded with chiles. Otherwise, a little heat is a nice touch to balance the flavor. One final bit of advice: make a bunch of these. They go fast!
