Italian Corona Bean Salad Recipe Recipe

For those of you who recently started following me on Instagram, you've probably noticed our family is traveling in Italy. We landed in Rome and took a train to Florence. We wake up early in the morning to start our sightseeing, visiting the most incredible places such as Palazzo Vecchio, Pitti Palace or the Duomo and going to the most fabulous restaurants. I also wanted to check out the Mercato Centrale where I bought Corona beans. They're considered the "poor man's meat" and have a very starchy texture. So when I prepared a simple, supersized bean salad, the beans gave incredible body to the salad.

I added marinated olives, artichoke hearts, freshly-made buffalo mozzarella cheese and loads of fresh sweet basil and parsley.

Gigante Bean and Kale Salad Recipe Recipe

Unlike many items on fast food menus, this kale salad should cause no alarm if super-sized. Kale leaves are massaged and marinated in a delectable white bean vinaigrette. The beans used were very creamy inside, so I mashed a small portion to thicken the texture of the dressing.

These Greek white beans are unusually large (compared to the standard beans) and are aptly called "gigante" beans. They have a toothsome bite, which helped balance the texture of the salad. I also added sun-dried tomatoes for a pop of color. Serve this complete, nutritious salad with garlic toast and you'll have a light, healthy, yet tasty meal.

Veggie Bean Burger with Cannellini Beans Recipe

Being a vegetarian doesn't have to equate with eating bland food. Since marrying Lulu, I've learned many dishes that are just as nutritious (and probably healthier) as meat dishes, without sacrificing flavor. This dish is a shining example. I used a few pantry ingredients such as dried cannellini beans, seasoned croutons and a lot of herbs and prepared white bean burgers.

Pair them with a yogurt sauce and you'll have a delicious meal.

Vegetarian Cassoulet Recipe

During our recent trip to Paris, I noticed "cassoulet maison" being the recurring specialty dish appearing on many brasserie menus. Cassoulet is a traditional French casserole dish originating in the South of France. The dish consists of several layers meat and cannellini beans.  My husband Lulu being a vegetarian and I wanted him to be able to enjoy the wonderful flavors of cassoulet. I made a meat-less equivalent, which makes a perfect complete meal for vegetarians thanks to the hearty white beans. I don't think I would make this dish often because it's quite labor intensive, but Lulu liked this comfort food so much that I might just make the effort. I'm sure he'll appreciate this dish even more when I make it.

For a contrast in texture, I served the vegetarian cassoulet as a layered nacho bean dish, using blue corn tortilla chips. Lulu loved it and even commented that "vegetarian cassoulet is so flavorful, I don't understand why one would ruin it by adding meat!" Isn't my husband funny?
