Vegetarian Stir Fry Recipe: Tofu with Beans and Carrots Recipe

I hadn't cooked tofu in a while and my husband Lulu asked for a vegetarian stir fry. I've wanted him to eat healthier, so I was happy to oblige. The base of the stir fry contains carrots, green beans and onions from Full Circle. To this, I added some kumquat jelly I made last winter (you could use any kind of sweetener you like) and a mixture of fresh garlic and red Thai bird chiles Lulu planted early this Spring. It's just the right combination of sweet and spicy, and I love that the recipe is flexible enough to make use of whatever you have on hand.

Spicy Yuba Stir Fry Recipe

Yuba is called tàu hũ ky in Vietnamese and it's a fairly common ingredient in the Buddhist vegan diet. Most meals resemble and have the texture of meat, and yuba often plays the key role of meat substitute in the dish. I was surprised to discover that Costco now carries this product. Lulu sampled the yuba strips and liked them, so I brought home a package.

I used the ready-seasoned spicy yuba strips and made a stir fry of various vegetables such as sugar snap peans, cauliflower, onion wedges and cucumbers freshly picked from our garden.

My husband Lulu noticed that the Marketmore cucumbers he planted two months ago had started to produce. It's so pleasant getting new vegetables every day. I'll show you our beautiful bounty of beets, cucumbers and zucchini soon. Our tomato plants are already 5 feet tall but the fruit hasn't quite ripened yet. I love California!

Soy Gluten Stir Fry Recipe

Soy gluten is one of those rare ingredients that can make me forget about meat. Unlike tofu, soy gluten has a chewy texture that gives more body and consistency to the dish.

Even though I'm a meat eater, I've been craving lots of vegetarian food and fish lately. So today, I stir-fried soy gluten and vegetables with the usual flavorings, such as black bean sauce, chili garlic sauce and soy sauce and then added Thai basil to finish the dish. I’m eating healthier without sacrificing taste, which is a delicious compromise!

Vegan Stir Fry Recipe: Fried Gluten with Vegetables Recipe

2011 has started very well for me (I returned to my home country of France last month and spent the holidays with my parents). Everything’s wonderful at home. There’s really only one thing getting me down. Last December, I received my first traffic ticket for not bringing my vehicle to a full stop at a stop sign. Now I'm taking full responsibility, but in my defense, I got distracted because there was a collision right in front of me. So now I have to take online traffic school to have the point removed from my driving record, which didn't give me much time to cook today. I know: excuses, excuses...

In honor of my traffic school test, here’s a description of today’s recipe in multiple choice question form:

I improvised a quick meal sautéing deep fried gluten, string beans, wood ear mushrooms, Japanese eggplants and a little kumquat marmalade:
