Canh Bi Do (Pumpkin Wonton Soup Recipe) Recipe

Canh bí đỏ is Vietnamese pumpkin soup. But in this recipe instead of simply boiling the pumpkin in broth, I used it as the filling in wonton wrappers (hoành thánh in Vietnamese).

The Vietnamese pumpkin has a naturally sweet creaminess. If it's cooked properly the skin is also edible and adds a wonderful texture. To make the dish into a complete meal, I add fried tofu for protein and wheat germ, fried onion and shiitake mushroom for extra flavor. The rest is a simple broth so as not to overpower the flavorful pumpkin wontons.

Tet Celebrations: Canh Hoanh Thanh (Wonton Soup Recipe) Recipe

This week marks the beginning of the Tết celebrations. A tradition of Tết is that you eat vegetarian (ăn chay) on the last day of the previous year and first day of Asian New Year, so I decided this week I will be sharing several vegetarian Vietnamese dishes with you until the celebration commences this weekend.

I haven't made wonton soup (canh hoành thánh in Vietnamese) in a while, which is a shame because it's not all that complicated. The filling consists of carrots, tofu, chestnuts, green onions, wood ear mushrooms and shiitake mushrooms. I also made a simple broth to let the flavorful vegetarian dumplings be the shining stars.

Shrimp Wonton Soup Recipe

Shrimp wonton soup is a delicious soup made with dumplings and chicken broth. It's perfect for soothing your throat. I served the Asian shrimp wontons along with broccoli florets to keep the dish very simple. If you want to serve this soup as a main course, you could add egg noodles along with other greens such as bok choy.

We're finally back from Texas where we spent our spring break and everyone except me is starting to get sick. I made this soup for the meat eaters in the house, but a vegetarian wonton soup is just as easy to prepare.

Vegetarian Wonton Soup Recipe

Wonton soup is made with dumplings and flavorful broth. It may look difficult, but the dish isn't as complicated as it seems. The key is to use thin, good quality wonton wraps. I've tried several brands and I’ve finally found the one with perfect thickness and consistency. All you need is a little practice at folding the dumplings. I will post a video soon demonstrating how to make wontons. Stay tuned!

I filled these wontons with fried jicama, tofu and shiitake mushrooms. I served the soup as a side dish. It's vegetarian, low in calories and delicious. Wontons are work, but they are rewarding.
