Cheesy Potato Croquette Appetizers with Harissa Sauce



The word croquette comes from the French verb croquer, which means "to bite, with a crisp crunch." It describes any moist, shaped item that is breaded and then pan-fried. Stuffing the croquettes with mozzarella cheese gives them a hot and gooey filling that contrasts wonderfully with the breaded crunch of the exterior.
