Lamb Tagine
Tagine is a Berber dish from North Africa. The spices in Berber cooking are very similar to Indian cuisine, but they incorporate additional sweet flavors, usually in the form of dried fruits. Potatoes act as a binding agent in this dish; their floury texture absorbs the beautiful color from the sauce made with saffron, cinnamon, cumin, and ginger. The sweetness of dried plums, dried apricots, and sun-dried tomatoes finishes the dish.
