Mashed Purple Potatoes with Herb Goat Cheese



Purple Peruvian fingerling potatoes are used for these mashed potatoes. They're smallsized waxy potatoes, with a skinny and oblong shape. The flesh is dark violet blue surrounded with a white rim. Peruvian fingerlings have a different flavor from regular potatoes, so you'll be surprised how unique this simple mashed potato dish can seem.
