Moussaka is a one-dish meal composed of grilled eggplant slices, layers of sliced potatoes, ground spiced lamb, and a creamy béchamel topping. The dish is prepared from Greece through the Balkans and all the way into the Middle East. Variations include a variety of roasted vegetables, and I have also tried one version where the béchamel sauce was replaced with mashed potatoes. Once you're comfortable with the basics of the recipe, have fun and be creative!
