Pomme Puree aux Olives
The idea for making olive-flavored mashed potatoes came from strolling through Parisian open-air markets. Most of them carry the most delicious varieties of olives that are not overly salty. Much like a painting hanging in the Louvre or Musée d'Orsay, mashed potatoes act as a canvas upon which the color and flavor of the olives can shine.
