Pommes Chateau with Fried Calamari, Basil, and Tomato Cherry Relish
This side dish is fit for a king! Potatoes are cut into small cylinders and sautéed in butter. Once crispy and golden, they're covered with cherry tomatoes, dried sour cherries, and fried calamari, three exciting tastes which play off of the backdrop of the potatoes.
