Pommes Rissolees

Pommes rissolées are a French classic. They're crisp, cube-shaped, pan-fried potatoes flavored with herbs. The secret ingredient in this recipe is duck fat, which gives a unique body and richness. Ground saffron and a hint of cayenne pepper add color; they're nontraditional additions but really enhance the final result. You know the saying: You eat with your eyes first!
