Potato Frittata
Although frittatas originated in Italy, this frittata recipe is actually a variant of a Spanish dish called tortilla de patatas. Sliced, fried potatoes are mixed with lightly beaten eggs and then cooked in a skillet. While nontraditional, the addition of yellow roasted bell peppers, hearts of palm, shallots, marinated artichokes, tarragon, and goat cheese providesa pleasing complexity to this otherwise simple breakfast fare.
