Potato and Carrot Souffle

Individual carrot and potato soufflés are a delicious and easy dish to make if you have guests coming over for a light brunch. The soufflés can be prepared in advance and placed in the oven one hour prior to your guests' arrival. These particular soufflés are flavored with cumin, thyme, nutmeg, and smoked cheddar cheese. Pair them with a simple arugula salad and you're all set!
