Tarte Pomme de Terre

The concept of a tarte salée (French for "savory pie") is pretty simple. The flaky dough is made with puff pastry and the filling is usually made from vegetables with a cheese topping. Potatoes work wonderfully, both in terms of taste and texture. The filling for this potato pie is made of a layer of caramelized onions, tomato sauce, pan-fried potatoes, and a cheese topping.
