Veal Hachis Parmentier (Shepherd's Pie)
Scottish folks may claim shepherd's pie as their own invention, but it's an unambiguously French version of the dish that was created for Louis XVI by apothecary proprietor Antoine Parmentier. Louis XVI was so taken with the dish that it became a royal staple, and he even took to wearing a potato flower on his lapel. This version is made with luxurious ground veal, befitting the decadence of this French king and his cake-eating queen.
