Yam and Semolina Flan with Pistachio Spun Sugar

Semolina flan is a French dessert packed with Oriental spices. Mashed and strained sweet potatoes provide color and a complement to the earthy flavors already present. The creamy dessert itself, though nicely complex, isn't very sweet. The richness of the caramel sauce and the pistachio candied spun sugar garnish are a welcome contrast.
