
It is officially tomato season at our house. Lulu planted 5 varieties of cherry tomatoes in February and I was finally able to gather a large bowl of them today. They are perfectly ripe, so sweet and definitely organic. There are Sun Gold, Sun Sugar, Sweet 100, Risenstraub and Yellow Pears.
I've been planting sweet basil in our herb box for the last two years but the rabbits always get to it before we have time to enjoy the leaves. So this year I got wise and placed a sweet basil plant that I got from Trader Joe's on the balcony of my bedroom.
So what do you do with a bounty of fresh tomatoes and sweet basil? Make a Caprese salad! I think there is no better way to showcase such fresh ingredients. Just gather some sweet basil, mozzarella cheese and tomatoes, drizzle them with balsamic vinegar and a good quality olive oil, and you're ready to eat!
You can either toss all the ingredients in a bowl or serve them separately as antipasto. Either way, you're going to get to enjoy Italian summer in a bowl. Buon Appetito!
