Caramel Zucchini Bread
Caramel apple effect flavored zucchini bread.
Yields: 1 loaf1 3/4 cup all-purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon apple pie spice
1/2 cup 1 stick margarine or butter room temperature
3/4 cup sugar
1 3.4 oz box instant vanilla pudding
2 large eggs
1 1/2 cups shredded zucchini
1/3 cup vanilla chai spice liquid coffee creamer
1/4 teaspoon pure vanilla extract
1/2 cup chopped pecans
1/2 cup caramel bits
Preheat oven to 350 degrees. Spray loaf pan with non-stick cooking or baking spray.
In a medium bowl, combine flour, baking powder, baking soda, salt and apple pie spice.
In a large mixing bowl, cream margarine or butter, mix in sugar, mix in vanilla pudding, mix in eggs one at a time. Gradually mix in flour mixture.
In a small bowl, combine shredded zucchini, coffee creamer and vanilla, stir into batter until incorporated.
Stir in pecans and caramel bits.
Place batter evenly in loaf pan. Bake for 60-65 minutes or until tester comes out with crumbs. Cool on rack in pan 10 minutes. Remove from pan place on rack to finish cooling.
