I love making guacamole. My version of guacamole is basically a mashed Haas avocado with salsa and a dollop of sour cream. Enjoy!
Ingredients
1 shallot, finely chopped
2 Tbs lime juice
1 tsp sugar
1 tsp garlic, finely chopped
1 tsp black peppercorns, freshly ground
1 whole serrano pepper, finely chopped
2 roma tomatoes, finely diced
1 Tbs curly parsley, chopped
1 tsp Tabasco sauce, to taste
1 tsp avocado oil
2 Tbs corn, (can)
1 Haas avocado
1 Tbs sour cream
Preparation
For the salsa:
Combine the red onion, shallot, 1 tablespoon of lime juice, the sugar, garlic, serrano pepper, the corn and the tomatoes in a bowl. Add the Tabasco sauce and the chopped parsley. Mix well. Drizzle with avocado oil. Season with salt and pepper.

For the guacamole:
Peel the avocado, then chop it into 1-inch cubes. Drizzle the remaining lime juice on the avocado to avoid oxidation. Wear a glove, then roughly mash the avocado cubes. Combine the mashed avocado with sour cream and 2 tablespoons of the freshly-made salsa.
Dig in!

Tips
You can use a different oil. I just find that avocado oil enhances the dish and is good for your heart. You can buy avocado oil at a cheaper price at Middle Eastern markets. The ones at Whole Foods cost 3 times as much.
