Muhammara and Cucumber Bites (Healthy Appetizer Recipe) Recipe

I created these irresistible appetizers for the California Lavash team a while back. It was their idea to combine muhammara (walnuts, charred red bell pepper, fresh pomegranate seeds and mint flavored spread), cucumber, dill, mint and cilantro in their fabulous, healthful lavash flatbread.

Being the ultimate hostess, in my opinion, requires the art of not only making delicious food but also creating enticing and delectable bites to make sure you please all your guests. I formed twirling portions, which is ideal if you're serving a small number of people. If you're hosting a large party, I would suggest rolling regular pinwheels to save time.

I think this type of food is especially appealing to female guests. The colors are striking, almost bewitching. The appetizers have a lot of flavor, yet are super healthy. If you're looking for store-bought muhammara, I highly recommend Haig's. But if you don't want to be too adventurous, you can replace the pomegranate spread with others such as crumbled feta and chopped olives mixed with Greek yogurt and lemon juice and substitute a touch of oregano for the mint.

Fig Noor Bread Cake Recipe Recipe

Fig Noor Bread Cake Recipe

08.30.13 by Jackie

This fruity bread dessert is so delicious you won't believe it only requires 5 ingredients. No egg, no baking time and no more than 30 minutes prep time.

I cut black sesame and caraway Noor bread into small pieces and soaked them in hot fig preserves. Once the preserves were chilled, the cake jelled into one entity. I served the fig Noor bread cake with tangy crème fraîche for richness and pineapple and raspberries for a touch of acidity to balance the sweetness of the preserves.

Last weekend, my good friend Laura, who's a jam expert, came over and picked 15 pounds of Black Mission figs in our garden. Aria and I helped gather as much fruit as possible so she could prepare her yummy fruit preserves. While selecting the ripe fruits, we chatted and Laura told me she would try a new technique.

The idea was to find a method that doesn't require pectin. To make the preserves, Laura started by combining water and lemon juice. After bringing the liquid to a boil, she stirred in sugar and brought the temperature to 250°F. Finally, she added the figs and vanilla beans and cooked the mixture at 220 degrees until jelled.

I also have an announcement for this weekend. I'm going to be making a stop in Houston, Texas for an interview with Cleverley Stone on CBS Radio 650 AM at 10am Saturday. Tune in if you can, because a lucky listener will win a free copy of my cookbooks. Then I head to Barnes & Noble to sign my just released cookbook,Banh Mi, and my previous book, Haute Potato. Make sure you stay to sample a dish featured in Banh Mi! Hope you stop by and say hi!

Pizza Cracker Recipe Recipe

Pizza Cracker Recipe

08.29.13 by Jackie

If you want to have a healthy late night snack, these savory pizza lavash crackers are for sure going to satisfy your appetite. Leftover lavash bread, thick tomato sauce, marjoram, thyme, oregano, crushed red peppers and Parmesan cheese are all you need to make the perfect crowd pleaser.

The spiciness from the crushed red peppers makes them so addictive. You can also prepare a sweet version with apples and cinnamon, if you prefer; these crackers are as delicious as their savory equivalent.

Crispy Fried Lavash Tacos Recipe

Crispy Fried Lavash Tacos

08.28.13 by Jackie

Crispy fried tacos are traditionally made with deep-fried tortillas, but since I received a humongous package from our friends at California Lavash, I prepared the tacos with lavash flatbread and they turned out beautifully. I also used the same oil for the tacos for deep fried catfish sticks. I filled the tacos with brown rice, roasted red pepper and eggplant spread, fried fish, red oak leaves, Mexican crema and curly parsley.

These do take a little of time to prepare but the result is well worth the labor. As appetizers, they're especially great if you're preparing them for a small crowd. I'm sure your guests will love these mix-and-mingle party bites.

Lavash Spanakopita (Palak Paneer Purses) Recipe

This is an Indian take on the classic Greek fare  with a healthy twist. I prepared the savory "pastry" with spinach-flavored lavash bread and used palak paneer as the filling.

Many Indian dishes are served family-style and this is a great way to turn palak paneer into individual servings. We had many guests over the weekend and I served these fusion-style appetizers with raita sauce on the side.

Quick note: I'm going to be in Houston this weekend for my first interview with Cleverley Stone on her show on CBS Sports & Entertainment Radio this Saturday, August 31st at 10 am. Then I will be heading to Barnes & Noble at 2 pm for a cooking demo, followed by a book signing. If you live in Houston or in the area, stop by and sample some of the food from my second cookbook, Banh Mi.

Barnes & Noble Fairway Market Place, 5656 Fairmont Parkway, Pasadena, Texas  at 2pm on Saturday, August 31st, 2013.  (No need for the ZIP code, since people won’t be mailing anything to you there.)
