Tomato Chana Dal Spiced Curry Recipe Recipe

I rarely make this dish because Daddy, my father-in-law, prefers chana dal without tomatoes. But today, I made an exception and prepared the gram lentils with the remaining San Marzano tomatoes we harvested from our vegetable garden. The weather has been incredibly hot lately in the Bay Area and a few tomatoes are still peaking daily. 

First, I boiled the soaked chanal dal until softened. Then I prepared a gravy using the tomatoes, mixed chopped onions and a bit of ginger. The marriage of the natural sweetness from the onions with the tanginess from the tomatoes works well. Once the thick sauce is ready, I added the chanal dal, drizzled a bit of water to thin the texture of the dish and added the signature Indian finishing touch of garam masala. Lulu and the girls absolutely loved it! Hopefully Daddy will come around as well.

Chickpea Soup Recipe

I had a lot of leftover soaked chickpeas after making chole (spicy Indian garbanzo beans), so I prepared a simple chickpea soup. I added potatoes that are invading part of our garden now, onions, a touch of lemon and whatever vegetables I was able to find in the kitchen (frozen corn, carrots and roasted red bell peppers). The result was surprisingly fabulous, especially since it's gluten free, dairy free and low fat. You could sprinkle a few Parmesan shavings for added richness if you like, but since there’s no photographic evidence, I’m going to say I didn't!

I prepared the chickpea soup with the idea that it was going to be for baby Aria, but all the grown-ups in our home enjoyed it just as much as she did. She's old enough to eat meat, fish and other solid carbs but I still prepare soups for her several times a week to ensure she doesn't go too hungry. According to my husband Lulu, she's plenty chubby but I guess through a mommy's eyes, there's always the fear of not providing enough for your baby.

Portobello and Chickpea Burger Recipe Recipe

Portobello mushrooms are a great meat substitute in burgers. The downside to them is the lack of protein. To compensate, I stuffed the Portobello mushroom with a chickpea patty. I blended the chickpeas and flavored the mixture with spicy garlic chutney (lesahn ki chutney) and added breadcrumbs and finely diced jicama.

I pan-fried the chickpea and Portobello bugers and paired them with marinated artichokes, lettuce, mini red sweet peppers and chipotle salsa. I nested everything in goat cheese-filled toasted English muffins. THese are so tasty, they'll even satisfy the meat eaters in your life!

Ultay Pultay Recipe (Indian Chana Pancake Curry) Recipe

Ultay pultay is what my father-in-law (I call him "Daddy"), who's a vegetarian, considers a festive dish. This dish is composed of thin, firmly pressed chickpea pancakes soaked in spicy gravy. The cooking time was a bit a long but seeing Daddy enjoy his meal was so rewarding. 

I learned to make ultay pultay from Lulu's paternal grandmother's sister. The entire family calls her Muni Baji in Urdu, which translates to "little sister" in English and she's indeed the youngest of a large brood; Lulu's grandmother was the eldest.

It was a lot of fun learning the curry dish from Muni Baji. She told me a lot of stories about her life in Hyderabad. For instance, the gravy calls for fried onion paste and back in the day, there was no blender so it was puréed by hand!

Red Hummus with Sun-Dried Tomatoes Recipe

My husband Lulu is still heartbroken that the Giants beat the 49ers in the NFC Championship Game last weekend, but our party for the Super Bowl is still on. At least I think it is. I'm planning on serving a lot of finger foods and this red hummus will be part of our tasty feast.

Though it's bursting with flavor, hummus can look a little dull, so I spiced it up with chile oil and sun dried tomatoes. The preparation is fairly simple and doesn't require more than a few ingredients, such as garbanzo beans, lemons, oil and of course sun dried tomatoes. Roasted or pickled garlic would be great here as well, but since we're going to be entertaining, I decided to omit it.
