Cepe Mushroom Gratin Recipe

While strolling in an open-air market in Paris with my father, he noticed fresh cèpe mushrooms. If you've never seen them, they're quite large and brown, very similar to porcini mushrooms. In my opinion, these are very tasty mushrooms and Jean-Damien, my brother-in-law, had mentioned people go "hunting" for these wild mushrooms in the Parisian forests ("les forêts d'Ile-de-France"). Papa bought 2 small cases and I made a very simple mushroom gratin to showcase the unique flavor of these wonderful mushrooms.

I sautéed the cèpes in garlic and sweet basil. Then I transferred them to a gratin dish and covered them with alternating layers of Gruyère cheese and béchamel sauce. The result was a divine, creamy dish that suits the rainy weather we've experienced here in France.

Mushroom Lasagna Recipe

I just found out September was National Mushroom Month, so to celebrate the occasion, I made one of our family's favorites: vegetarian mushroom lasagna. I used cremini mushrooms, which have the right size and texture for lasagna. Onions and tomato sauce also play an important role in the dish, as of course does the cheesy white sauce. I included soy chorizo to provide some protein and a little kick to the meal. If you’re not a vegetarian, you could of course substitute ground meat in its place.

The layers of the lasagna can be a little soft, so I topped it with a Parmesan and bread mixture. I find this dish to be comfort food at its best: rich, flavorful and bold while still being familiar. Definitely worth the effort!

Chili Stuffed Mushrooms (Vegetarian Appetizer Recipe) Recipe

If you thought chili couldn't be the basis for an elegant appetizer, give this recipe a try! I had leftover vegetarian chili, so I scooped it into stemmed crimini mushrooms. I baked them for 20 minutes, sprinkled on a combination of queso manchego and Oaxaca cheese and then baked them again until the cheeses melted.

After placing them on the table, I just turned my back for a few minutes and the appetizers were all gone. Everyone asked for more, and since these little bites are pretty nutritious, I had no problem obliging!

Crimini Mushroom Tart with Roasted Cherry Tomatoes Recipe

Mushroom Polenta: Savory Napoleon Recipe Recipe

Napoléons are usually pastries made of three layers of puff pastry and two crème pâtissière layers with a fondant topping. I made a savory equivalent using layers of grilled polenta slices, portobello mushrooms, cheddar cheese, grilled asparagus and tomatoes from our garden. 

It's finally tomato season! My husband planted 19 different plants of various tomatoes, which means I'm going to be cooking a lot of tomatoes until the fall. Lulu gathered a large basket of cherry tomatoes that I roasted in fresh thyme and served as garnish. We also happened to find some asparagus Lulu planted several years ago that we were never really able to harvest. It was a nice surprise, so I grilled them too, and added them to the Napoléon layers. I was very proud of how the dish ended up looking: colorful and pretty.

In my opinion, Napoléons have to look gorgeous before being eaten. We eat with our eyes first and I'm confident these savory Napoléons will satisfy the pickiest eater.
