Red Bean Pot de Creme Recipe Recipe

Red Bean Pot de Creme Recipe

02.21.11 by Jackie

To me, Vietnamese desserts taste delicious. My husband Lulu, however, is not a big fan of either their taste or their aesthetics. Lulu has a serious sweet tooth, so for him, the very subtle use of sugar in Vietnamese desserts is not nearly satisfying enough. I love the flavors though, so I decided to make a French and Asian fusion dessert that would make us both smile.

After much deliberation, I decided to make red bean pots de crème. Red bean, in case you don’t know, is often found in Asian desserts. To incorporate the ingredient, I used the same technique as for making traditional pots de crème, but I also added mashed sweetened red beans. In addition, I substituted coconut milk for regular cow's milk. To make the dessert more attractive, I added a dollop of matcha-flavored whipped cream and garnished with green-colored sugar.

The visual is nice and the flavors and texture are intense and rich. Mission accomplished!

Lemon Tiramisu Recipe Recipe

Lemon Tiramisu Recipe

02.16.11 by Jackie

Lemon tiramisu is a great dessert to end a very romantic dinner. Yesterday, I served my Valentine a dinner that is reminiscent of our recent trip to Rome. Instead of the traditional ladyfingers in between the layers of mascarpone cream, I used chocolate chip biscotti instead. I flavored the mascarpone cream with Meyer lemons, which paired wonderfully with theItalian chocolate cookies.

We looked at the photos of our trip to Italy, while feeding each other from the dessert cups. My favorite place was, of course, the Vatican (thanks for the link, Bill!) with its magnificent frescoed ceiling in the Sistine Chapel. Oh so romantic!

Blackberry Cupcake Recipe Recipe

Blackberry Cupcake Recipe

02.09.11 by Jackie

My husband Lulu is leaving for a 4-day business trip, so I packed a cupcake and a little message to satisfy his sweet tooth and let him know that his wife is thinking about him and misses him. What can I do, I'm a true romantic!

I flavored the cupcakes with blackberry frosting and decorated the top with sugar roses made from pandan-flavored marzipan and fresh blackberries. This might sound a little cheesy but I think the main ingredient is love. With that, even the worst disasters (I’ll tell you about mine some time) turn out ok. Have fun preparing for Valentine's Day!

Superbowl Sugar Cookies Recipe

Superbowl Sugar Cookies

02.04.11 by Jackie

As a French girl, it’s probably not surprising how ignorant I am about American football. My husband Lulu has tried several times to teach me the rules, and failed miserably. I'm trying hard, I promise!  At the very least, I can participate in the fun by whipping up some delicious snacks to enjoy during the game.

Today, I made batches of sugar cookies using the colors of both teams. I used black and yellow for the Steelers and green and yellow for the Packers. The black, yellow and green cookie doughs were respectively flavored with semi-sweet chocolate, Meyer lemon and pandan paste.

I remember a few years back that the Steelers were participating in the Superbowl as well, so they must be a good team. Lulu's rooting for them, but with these cookies you can represent yourself no matter which team you're cheering for. I’m also going to post a list or two this afternoon of other tasty treats that you can serve at your Superbowl party, so stay tuned for that. I hope you enjoy the food and the company this Sunday!

Clementine Chocolate Parfait Recipe Recipe

I made clementine mousse using fruits from our garden. The zest is amazingly fragrant. The exterior has such a deep orange color, I thought it would be perfect dressed as a parfait paired with French chocolate cookies we bought in Normandy.

My husband Lulu and I brought a lot of delicious French food back home from our recent trip to Europe. The cookies in the dish are called "La Mère Poulard" chocolatine cookies. They are specialty cookies from the Mont Saint Michel region of France. My parents took us there on New Year's Day. It's a rocky tidal island located in Normandy, topped with beautiful shops and a church. It’s a UNESCO World Heritage Site.

While we were there, we had the region’s typical crêpes and of course brought back a few packs of cookies. If you’re in France and you have time, I recommend taking a visit.
