Cardamom and Banana Muffins

There's a French idiom "après l'effort, le réconfort", which roughly translates to "after all that effort, sit back and relax". My husband's teenage sisters Lya and Mimi took this idiom to heart, culinarily-speaking, by baking mini-muffins after a hard three-hour workout. What can I say, they were hungry for sweets. The girls decided to flavor them with freshly crushed cardamom and ripe bananas and baked them in a mini muffin pan. The illusion of saving calories by eating multiple mini treats instead of one big one made them feel good.

I love cardamom. It’s a common flavor in Indian cuisine; in addition to its potency, it's very versatile. You can easily make a fragrant gravy or flavor your favorite dessert, all with the same ingredient. What’s not to love?

Thai Sticky Rice Recipe

Xôi xoài Thái Lan, in Vietnamese, literally translates to "mango sticky rice from Thailand". It's a very popular dessert in Asia; steamed sticky is rice covered in sweetened, fragrant coconut milk and paired with freshly-cut mangoes, then drizzled with thick, syrupy coconut sauce and sprinkled with lightly toasted sesame seeds. 

I made this dessert is because I had leftover pandan leaves that I used in the recipes I developed for my second cookbook, Banh Mi, available since July 18th. By the way, it was named "Best Book of the Month" (July badge) on Amazon. Also, my husband's teenage sisters, Sunny, Lya, Mimi and Lala (that's what Aria calls them) spent last month in Asia. I was surprised when they got back that they asked for this sweet treat, because it's such an easy, common Asian dessert.

It really satisfied their craving and I hope it brought back good memories of their time on the beaches of Thailand and Vietnam.

Mulberry Pavlova with Black Corinth Grapes Recipe

Pavlova is an easy dessert that consists of a meringue base coated with whipped cream and topped with fresh fruit. I used what's in season and flavored the dessert with freshly-picked black mulberries from our garden and garnished it with black Corinth grapes. For a nice contrast in color and flavor, I decorated it with crushed pistachios and toasted coconut flakes.

You can prepare the meringue way in advance and assemble the dessert at the last minute. I prepared the base in the morning and later in the day, I sent the girls to get messy and pick the gorgeous mulberries. Once they were slightly crushed, a delightful, naturally slightly thick syrup oozed out. With just a little assembly, the dessert was ready to be served right away.

Chocolate Cherry Muffin Recipe

Whenever I go a little overboard buying bananas at the market, once the bananas are totally over-ripe, I end up mashing to them for baking. Muffins are a great way to make use of them, and today I made chocolate sour cherry muffins. I used frozen Montmorency cherries, dried cherries and milk chocolate chips. The tartness from the fruit provided a great balance of flavors with the richness from the chocolate.

Lya's best friend is having a sleepover tonight, so I prepared these for them. Their plan is to dance othe  the XBOX 360 Dance Central game, then watch loads of movies. The bffs will definitely get munchies during their fun night, and these cherry muffins are the perfect late night snack!

With the temperatures rising in the Bay Area, I think I'm not going to cook a lot for our Indepence Day pool party. My husband Lulu is going to be in charge of grilling vegetables and hot dogs and I'll take care of the sweet treats
