Salted Caramel Milk Chocolate Chip Cookie Recipe Recipe

I haven't been active for the past week on PhamFatale.com. We've spent a crazy holiday season, baking a ton! Here's one of the many chocolate chip cookie versions we made during the week. We used chocolate we received over Christmas, so these feature M&Ms and chunks of coarsely chopped Godiva salted caramel milk chocolate bars.

The secret to perfect texture for this timeless classic is to closely watch the baking time. Don't over-bake them but also don't under-cook them or you'll end up with just cookie dough! Happy baking!

Christmas Dessert: Macaroon Parfait Recipe Recipe

Are you still looking for the perfect dessert to serve this holiday season? This dessert contains all the three elements I would usually enjoy as a child during the Christmas season in France: citrus, coconut and chocolate. And how did I accomplish such a feat? By creating a kumquat macaroon parfait, of course! 

To make the dessert Christmas-themed, I made two colored chocolate puddings. One was prepared with white chocolate powder and green-colored chocolate chips and the other with strawberry powdered drink mix and red chocolate chips. The base and top of the dessert were made with macaroons.

This week has gone by so fast. And it's already that time of the week when I share another dessert recipe with you. I prepared a French dessert I make often during the winter season because it doesn't require any fruit. I simply raided my pantry and used vanilla beans, instant coffee and Kahlúa, which is a coffee-flavored, rum-based liqueur. Yes, you probably already guessed it; I prepared pot de creme.

I love how easy and simple they are to make. The texture is velvety and lightly sweetened. In my opinion, pots de crème are the quintessential representation of decadence one can find in French desserts.

This is a sample of the desserts I prepared for Thanksgiving over the past few years. We haven't decided which ones are going to be served this Thursday, but one thing we know for sure is that there are going to be plenty of sweets on the table!

I also suggest trying a pumpkin version of the sweet potato tarte almandine I published in my first cookbook, Haute Potato.

Butterscotch Blondie with Pumpkin Recipe

This Thanksgiving dessert was my sister-in-law Mimi's idea (that's what baby Aria calls her). And even though she's a very athletic teenager this year (Mimi's part of the junior varsity basketball team at her school, which requires two hours of training every day), her guilty pleasure is any kind of sweet treats. She's making a list of the desserts we should be serving next Thursday and she absolutely wants this one to be included. This week, we tested the blondie recipe with a spiced pumpkin puree topping. The only way to incorporate pumpkin was to create a little swirl. 

Baking with kids is so much fun. It's a great way to introduce them to new flavors and educate them about what they eat. And kids love to make and eat the results of their hard work.
