Green Shortcakes with Cream Cheese Frosting Recipe

It's Saint Patrick's day next week, so I thought I would feature our family's favorite snacks: sweets, of course!

I prepared strawberry-flavored shortcake batter as the base of the dessert. To ensure a moist texture, I also added crème fraîche. For the green decorations, I used cream cheese frosting colored with pandan paste and light green sprinkles. My little one adored them and I enjoyed watching her eat them just as much. Give this recipe a try next Monday; these mini sweets would make a leprechaun "green" with envy.

Vanilla Buttercream Ruffle Cake Recipe Recipe

Hi everyone! This is Sunny, Jackie’s oldest and coolest sister-in-law, and today I’m guest-posting on Pham Fatale!

So about two weeks ago I was procrastinating on Pinterest when I came across this picture:

It’s a cake by Martha Stewart. You could say it was love at first sight—one look at those adorable pink ruffles and I knew I had to make this cake.

Only one problem; although I love to bake, I’ve never made a cake in my life. Cookies, cookie pies, brownies, blondies, but definitely nothing as glitzy as this three-layered Swiss meringue buttercream ruffled cake. But I was absolutely determined to make it, and I think it turned out pretty well. If an 18-year-old novice confectioner can make this cake, you absolutely can too.

Instead of making a lemon cake like the one in Martha Stewart’s recipe, I decided to keep it simple with a vanilla cake and vanilla frosting. The cake batter was pretty straightforward; I like this particular recipe because the cake is the perfect balance between dense and airy. The Swiss meringue buttercream, daunting as it sounds, was also easy to make, although I would pay attention to a few helpful tips when making it.

The real fun came when it was time to frost the cake. After frosting and crumb coating the cake, I refrigerated it overnight to let it set. For the ruffles, I used a Wilton #124 piping tip, although many other petal tips would also work. It was a matter of watching several YouTube videos and practicing a bit on the side of my mixing bowl, but I definitely got the hang of it after a few ruffles. Two of my sisters also had a go, and we had a lot of fun. I decided not to ruffle all the way into the middle and instead filled the center with some whipped cream. The finished cake wasn’t perfect, but the ruffles are very forgiving. And so cute!

Almond Chocolate Cake with Nougatine Recipe

I served this indulgent chocolate dessert for tea time this week. What I like most about it was that it's gluten free, made with almond meal and the texture was so moist. I topped the individual cakes with toffee salted caramel chocolate frosting and a garnish of crushed almond brittle.

This week has gone by ridiculously fast! I'm planning on baking a lot this weekend for our weekly family brunch and will share the recipes this upcoming week. Relax and spend as much time as you can with your loved ones. Life is short. Hug them, tell them you love them and give extra attention to the ones who love you most!

Cookie Butter Blondie Bars Recipe

Cookie Butter Blondie Bars

02.24.14 by Jackie

This is my upscale version of a PB&J sandwich. Instead of using good ol' peanut butter, I used speculoos spread (fancy word for gingerbread cookie butter) and I skipped the bread and prepared blondies mixed with honey-roasted peanuts. As for the jelly part, I used a combination of crushed fresh blackberries and fig spread I prepared last Fall from the figs in our garden.

Every weekend, I try to get the girls involved in the kitchen by preparing a large brunch together. It's a great way for our family to catch up with each other's busy lives. In my opinion, food is a great tool for bonding and sharing memories.

As expected, these cookie butter bars were a (fig and blackberry-flavored) smashing success (no pun intended) for both kids and grownups!

Cardamom Chocolate Mousse topped with Meringue Cookies Recipe

This elegant chocolate dessert might seem complicated but it really wasn't. First I prepared a cardamom-flavored chocolate mousse. The mousse required very few ingredients: milk, whipping cream, butter, sugar and of course cardamom and chocolate (the stars of this sweet treat!). You'll notice no eggs were used in this step.

The second step is the meringue cookie topping. You can prepare the meringues way in advance and assemble the dessert at the last minute. The meringues provided a nice contrast of texture against the velvety chocolate mousse, as well a striking contrast of color.
