Back to School Macaroni and Cheese Recipe

Do you want your child to be the most popular kid in the lunch room? Try this macaroni and cheese recipe. I flavored the béchamel sauce with roasted red bell pepper, garlic and sun-dried tomatoes and of course a variety of cheeses. The color turns out more vibrant and the texture is perfect with both gooey and stringy cheese mixed together.

I packed the mac and cheese in a bento-style thermos lunch jar so the dish would remain warm until lunch time. My little 6-year-old sis-in-law has been going to school for less than a week but she's already made a lot of friends. When she came home, I found an empty box. She told me her lunch box is a great conversation starter!

Morel and Blue Cheese Pasta Gratin Recipe (Cheese Pasta Casserole) Recipe

Our vacation is coming to an end, and we head back home in the morning. For the ride back, I made a pasta gratin using radiatore pasta with fresh morels and a blue cheese white sauce. You know, just in case anyone gets hungry! I combined the ingredients in a casserole dish sprinkled with shredded Parmesan cheese and served the gratin casserole dish with tomato and greens.

I got many of the ingredients yesterday at the Rogue Valley Farmers' Market in Ashland, where I discovered a myriad of wonderful fresh products. I was particularly drawn to the white raspberries, Oregonian goat sausages and fresh morels. After purchasing the ingredients at the market, in the afternoon we visited the headquarters of Harry and David where I bought some delicious blue cheese that ended up in this dish. Southern Oregon has turned out to be absolutely delicious!

Salsify Potato Cheese Gratin Recipe

Salsify Potato Cheese Gratin

02.04.10 by Jackie

Gratin of salsify is a very common French winter dish. For my version, I added steamed fingerling potatoes and diced Granny Smith apples to make the flavors more interesting. The acidity of the apples and the starchiness of the potatoes give the salsify a great balance both in texture and taste. As you would any other gratin, the dish is covered them with béchamel sauce made with cheddar for a rich color. The crust is topped with Dubliner cheese.

If you've never tried Dubliner cheese, you should. We've all become addicted to it. Its flavor is very similar to an aged gruyère, but with fruitier notes and a sharper bite. It's become one of my "go-to" cheeses for cooking. It takes this classic French version of comfort food to another level.

Artichoke and Spinach Manicotti Pasta Recipe

I stuffed my manicotti with artichoke and spinach, and served the dish gratin-style with a layer of mozzarella cheese over the top and a bed of marinara sauce beneath. The artichoke and spinach mixture evokes the flavors of a dip, which contrasts nicely with the brightness of the marinara.

This is one of my favorite pasta dishes because it's very easy to make, while at the same time having great presentation value. Manicotti have the added benefit of freezing extremely well, so I always make them in large batches.

Purple Potato Gratin with Salmon Mousseline and Beurre Blanc Recipe

I bought Peruvian purple fingerling potatoes at the Farmers' market. Purple potatoes have a subtle grainy texture and I thought they'd pair perfectly with salmon mousseline.

Beurre blanc sounds like a sophisticated element in a French dish, but it's really just a white wine butter sauce. It's quite common in France and is often paired with poached fish and steamed vegetables. I think that it complements the crunchy potatoes and velvety salmon mousseline quite well. I finished each dish with a dollop of crème fraîche, some fresh dill and a couple of pink peppercorns. It's a feast for the eyes as well your taste buds.
