French Green Beans with Oven Roasted Tomatoes Recipe

Haricots verts with oven roasted tomatoes are a great side dish. If you're in the market for a great green bean recipe for Thanksgiving, this might be it! It may look simple, but it’s absolutely bursting with flavor.

Making the dish takes quite a long time but requires very little work. The tomatoes are caramelized in balsamic vinegar, palm sugar and garlic and very slowly roasted for 2 hours. French green beans are very fine and tender, so they require very little cooking. I sautéed them in caramelized onions and added the tomatoes at the last minute. The crunch from the greens and the softness from the tomatoes make a wonderful combination without packing a lot of calories.

Rice-stuffed tomatoes are quite easy to make. I made this version with a sun-dried tomato risotto, which I then stuffed inside Brandywine tomatoes. The tomatoes were paired with a vegetable sauce made from the insides of the tomatoes, lemon juice, and a few additional vegetable such as carrots, corn, peas and onions. The sauce was placed at the bottom of the baking pan to help keep the tomatoes from burning.

I topped the tomatoes with a Parmesan shortbread crust and baked them for a few minutes before serving. The result is a fairly light meal with a nice contrast of texture from the crusty top and the creaminess of the rice filling.

Cucumber Raita (Indian Yogurt Recipe) Recipe

Raita is an Indian condiment made with yogurt (dahi in Urdu). It's used in Indian cuisine as an "antidote" to spicy food. But the yogurt not only cuts the heat, it tastes great too.

Traditionally, raita is seasoned with cilantro, ground cumin, mint and red chili powder. For more texture, I added finely diced raw vegetables such as Persian cucumbers and tomatoes.

If you fancy a change of pace, you can try my “fusion” raita that uses a lot of French flavors and techniques. My husband Lulu loves it with khichdi!

Seafood Crab Salad Recipe

I bought 2 fresh crabs from the seafood market and was planning on making my favorite dish: tamarind crab. But as I was prepping the ingredients, we had surprise guests for lunch. So I improvised a crab salad with what we had available in the kitchen. All the extra ingredients and flavors in the salad help stretch the number of servings you can get out of 2 crabs, which is perfect when you’re entertaining.

To begin with, I boiled the crabs, removed the crab meat and drizzled it with lime juice. I added roasted green bell pepper, tomatoes, avocado and grilled eggplant. I served the crab salad with a flavorful wasabi-coconut salad dressing and toasted bread on the side.

Grilled Tomatoes (Simple Barbecue Recipe)  Recipe

This tomato recipe is simple but so flavorful. I always make it when we barbecue. Unfortunately, this year was horrible for the tomatoes from our garden. Lulu planted two dozen tomato plants. I was so ecstatic about getting sweet, juicy tomatoes, but the gophers killed all our plants. If you have a cure for a gopher infestation, please send me a message. Anyway, since we didn’t have enough from our garden, I bought plum tomatoes from the farmers' market for our 4th of July barbecue.

Grilling tomatoes only requires skewers, garlic, oil, salt and pepper. To make it more flavorful, I thread the tomatoes onto oregano sprigs. Once the tomatoes are cooked, I drizzle them with shallot vinaigrette. They're best when they're still warm. Yum!
