Seafood Crab Salad Recipe Recipe

Seafood Crab Salad Recipe

07.26.10 by Jackie

I bought 2 fresh crabs from the seafood market and was planning on making my favorite dish: tamarind crab. But as I was prepping the ingredients, we had surprise guests for lunch. So I improvised a crab salad with what we had available in the kitchen. All the extra ingredients and flavors in the salad help stretch the number of servings you can get out of 2 crabs, which is perfect when you’re entertaining.

To begin with, I boiled the crabs, removed the crab meat and drizzled it with lime juice. I added roasted green bell pepper, tomatoes, avocado and grilled eggplant. I served the crab salad with a flavorful wasabi-coconut salad dressing and toasted bread on the side.

Grilled Tomatoes (Simple Barbecue Recipe) Recipe

This tomato recipe is simple but so flavorful. I always make it when we barbecue. Unfortunately, this year was horrible for the tomatoes from our garden. Lulu planted two dozen tomato plants. I was so ecstatic about getting sweet, juicy tomatoes, but the gophers killed all our plants. If you have a cure for a gopher infestation, please send me a message. Anyway, since we didn’t have enough from our garden, I bought plum tomatoes from the farmers' market for our 4th of July barbecue.

Grilling tomatoes only requires skewers, garlic, oil, salt and pepper. To make it more flavorful, I thread the tomatoes onto oregano sprigs. Once the tomatoes are cooked, I drizzle them with shallot vinaigrette. They're best when they're still warm. Yum!

Trenne Pasta with Napa Cabbage and Chorizo (Pasta Con Verza Recipe) Recipe

Chorizo, cabbage and sage may not be an obvious combination, but they work incredibly well together. The vegetarian chorizo, or "soyrizo", adds a ton of spice and the Vitamin A-packed Napa cabbage imparts a subtle sweetness to any meal.

I just made a batch of vegetarian chorizo today, which is what inspired me to make this dish. There are many good reasons for making your own, but the main reason is that it's much healthier (no cholesterol) than the meat version, without sacrificing flavor.

I paired the chorizo and cabbage mixture with triangle-shaped trenne pasta because it's much more fun for children than "boring" penne pasta. It's also a great way to get fussy kids to eat their cabbage. For all those people out there who think that healthy has to be tasteless, you need to try this dish. It's bursting with flavor without packing on the calories.

Vietnamese-Style Stuffed Tomatoes (Tomates Farcies) Recipe

A lot of Vietnamese dishes are inspired by French cuisine, because Vietnam was a longtime colony of the French empire. Tomates farcies (cà chua nhồi thịt in Vietnamese) is no exception. In Vietnam, it is referred to as tomates farcies, which literally translates to "stuffed tomatoes tomatoes"!

Traditional French stuffed tomatoes are filled with garlic bread crumbs, chair à saucisse and chopped jambon de Bayonne (sausage meat and prosciutto). The Vietnamese version uses the same filling as meat eggrolls.

I used veal for its low fat content as well as its texture and color for this dish. And most important, it cooks pretty fast. You can certainly use any other meat, such as ground beef.

Orange-Flavored Fried Tofu with Water Chestnuts Recipe

I felt like making my vegetarian sweet and sour pork recipe today, but I didn't have any pineapples on hand. Sweet and sour sauce is very versatile; you can substitute many tart fruits in place of the pineapple, such as oranges, plums or green mangoes. I had a number of sweet oranges on hand, so I used them instead.

The dish turned out to be a big hit. I think it's important to have at least a few recipes in your repertoire that are easy to modify depending on what you have in your pantry. This particular sauce goes great with chicken as well, so if, like me, you have to cater to both meat eaters and vegetarians, you can make one sauce for two dishes.
