Vegetarian Hot and Sour Soup Recipe Recipe

Hot and sour soup is a wonderful first course. It's bursting with strong flavors such as kaffir lime leaves, chiles and lime juice. To balance the dish, cubes of silken  tofuwater chestnuts and  wood ear mushrooms are added. I also thickened the broth with tapioca starch.

The girls and I are still keeping up with our daily workout routine, starting in the wee hours of the morning while the baby is sleeping. After completing our exercise, we all discuss what the menu of the day is going to be. Fun time!

Spicy Yuba Stir Fry Recipe

Yuba is called tàu hũ ky in Vietnamese and it's a fairly common ingredient in the Buddhist vegan diet. Most meals resemble and have the texture of meat, and yuba often plays the key role of meat substitute in the dish. I was surprised to discover that Costco now carries this product. Lulu sampled the yuba strips and liked them, so I brought home a package.

I used the ready-seasoned spicy yuba strips and made a stir fry of various vegetables such as sugar snap peans, cauliflower, onion wedges and cucumbers freshly picked from our garden.

My husband Lulu noticed that the Marketmore cucumbers he planted two months ago had started to produce. It's so pleasant getting new vegetables every day. I'll show you our beautiful bounty of beets, cucumbers and zucchini soon. Our tomato plants are already 5 feet tall but the fruit hasn't quite ripened yet. I love California!

Mock Fish Recipe: Pan Fried Seaweed Tofu Recipe

Cá chiên chay (vegetarian fried fish in Vietnamese) is my attempt to eat approximately the same dish as my vegetarian husband, Lulu. It doesn't bother him so much, but it makes me a little sad that even when we share a meal, we're not actually eating the same thing. I cooked fish for myself today, and I whipped up a mock fish equivalent dish using tofu skin, crumbled tofu and seaweed to go alongside it. The result was surprisingly delicious. Lulu enjoyed his vegetarian meal and I enjoyed my fish as well.

I paired the "fish" with jasmine rice and canh mồng tơi (broth with leafy greens). The meal remained healthy yet very tasty.

Bun Bi Chay Recipe

Bun is a popular Vietnamese meal, which consists of rice vermicelli noodles, shredded lettuce, bean sprouts, cucumber, a protein element and dipping sauce. Bun bì chay is a vegetarian version that replicates shredded pork by using fried sliced jicama and fried tofu.

This is an ideal and very refreshing hot weather dish. The preparation is labor intensive, especially with chopping and frying, so I usually make a large quantity. It's delicious and keeps for a few days, so it's definitely worth the effort.

Peanut Chicken Satay Recipe

Peanut sauce is always well appreciated. It's tasty, very easy to make and can be served with many different ingredients. Chicken Satay is a classic, and for this recipe I marinated the chicken and prepared the components of the dish in advance for a truly easy meal. The peanut sauce was made from scratch with peanuts that I blended until smooth and creamy, coconut milk, galangal, limes and fresh lemongrass.

For more texture, I added fried jiacama and fried tofu to the chicken breasts. I served the chicken satay with steamed jasmine rice, sliced cucumbers and chopped tomatoes.
