Vegetarian Chow Mein (Chinese Sauteed Noodles with Tofu and Vegetables) Recipe

I've noticed that kids love chow mein. It's probably because they are crazy about soft noodles in general. I usually make a huge pot of stir-fry green beans and tofu the day before and use the leftover to make chow mein. I love making chow mein, I think it's because of the sizzling sound of the stir-fry vegetables and noodles in the wok. And it's quite some exercise stir-frying and lifting a large quantity of food using 2 big spatulas, so you will feel like you've earned the calories when you eat it!

The combination of stir-fry noodles, vegetables and soy sauce is a  classic in Chinese cuisine. Make chow mein at home; there's no need for take out. It is always a hit.

Vegetarian Pho (Pho Chay) Recipe

Vegetarian Pho (Pho Chay)

04.29.09 by Jackie

I made some beef pho again today -check out the new photo, I've just updated the post- and I felt like making a phở chay, vegetarian rice noodle soup for the rest of the family. The only extra work for pho chay, in addition to the beef pho (for the carnivores at home) is to fry some silken tofu and make the vegetarian broth.

Lulu, my husand, has been begging me to find Vegemite. I finally found some. It brings back good ol' memories from my trips to England as a child. Believe me, it tastes no different than Marmite. Vegemite is a combination of yeast byproduct and vegetable flavorings, and if you've never had it, it sort of has the taste of beef boullion cubes. Vegemite is not only great as a spread on a piece of bread, but can be a tasty addition to vegetable broth. Though not traditional, I used a bit in my pho broth to give it a more complex flavor.

Vegetarian Indian Curry Tofu Pot Pie Recipe

A pot pie is a medley of vegetables and meat in a thick sauce, wrapped in a pie crust. I love chicken pot pie. Unfortunately, I can never share this meal with my hubby Lulu since he's a vegetarian. I always try to adapt what i eat to Lulu's dietary restrictions. Today, I tested a fusion pot pie based on the sauce from my Ma-Po tofu recipe and a curry sauce. I added fried tofu for the protein, and included shitake mushrooms with the vegetables that traditionally go into this English dish.

Of course, if you love meat like me, you could substitute cooked chicken for the tofu.

Toasted Sesame Tofu Caramelized with Agave Nectar, Wasabi and Soy Sauce Recipe

There are many sweet and sour flavor combinations in Asian cuisine, but I've gotten bored with the traditional hoisin plum sauce.  For this preparation I added agave as the sweet element in the dish. I've been experimenting with agave nectar that I got on my last trip to Florida.

Agave has a complex flavor that is sort of a cross between honey and caramel, but milder.  Tofu absorbs any flavor it comes in contact with and is perfect for the agave sauce. The dish is finished with some toasted sesame seeds for added crunch.

Vegetarian Ma-Po Tofu Recipe

Vegetarian Ma-Po Tofu

03.08.09 by Jackie

Ma-Po tofu (or Mapo tofu) is a combination of silken tofu and stir-fried vegetables in a chili garlic and black bean-flavored sauce. The sauce is a thick, (non-runny) spicy brown broth. It's a very popular vegetarian dish on the menu of many Chinese restaurants. Now you can make your own without stepping out of the house.

You can make it non-veggie by adding thin slices of beef quickly sautéed in garlic and scallions.
