Vegetarian Sweet and Sour Pork Recipe

Vegetarian Sweet and Sour Pork

07.25.09 by Jackie

Sweet and Sour Pork can be found on the menu at just about any Chinese restaurant.  I wanted to make use of the pineapple and ketchup sauce in a vegetarian dish for the herbivores in my house.  I substituted tofu for the pork; you can also use seitan if you prefer (or meat if you're like me).

I used fresh pineapple to provide natural sweetness and a hint of tang to the sauce.  I also added a little lime juice to brighten it up. To thicken the sauce, I dissolved a little cornstarch in water and added it to the mix. To this, just throw in a few carrots and enoki mushrooms and you're ready for a quick and easy dinner.

Crispy Egg Noodles with Mixed Vegetables (Mi Xao Don) Recipe

Mì xào dòn chay, literally "vegetarian crispy sautéed noodles" in Vietnamese, is probably the most typical comfort food in Vietnamese cuisine. Its sauce is quite similar to ma-po tofu and adds an interesting, richer texture when it's blended with the crispy noodles. The addition of mixed vegetables and tofu makes it a very healthy dish even though the noodles are fried.

This dish reminds me of my first date with my husband at a Vietnamese restaurant back in 2000. I remember that mì xào dòn chay was the only vegetarian dish on the menu. I ordered the beef version mì xào dòn bò. I started eating and Lulu, shy, was staring at me. I asked him if everything was okay; I was thinking that maybe he didn't like this dish. And he said that he was afraid to be clumsy and spill the sauce everywhere and asked me if I could mix the sauce and crispy noodles for him. I found it so adorable. I have been mixing the sauce and noodles for him every time I make this dish ever since.

Vegetarian Sizzling Rice Soup Recipe

Vegetarian Sizzling Rice Soup

07.09.09 by Jackie

Yesterday, I promised that I was going to post a recipe about how to make sizzling rice soup. So I reserved 1 cup of parched rice from the Indian puffed rice snack we made yesterday, called chudwa in Urdu.

My favorite part of making sizzling soup is the sound of the freshly fried puffed rice in contact with the broth. It always amazes the kids. My poor Lulu's caught a bad cold so the warm broth really helped soothe his throat.  And he's a big kid, so the sizzling amazes him too!

I added water-chestnuts for crunch and miso and tofu for protein. The result is a very healthy and flavorful soup that you can enjoy as a starter or as a full meal.

Vegetarian Tajine Recipe

Vegetarian Tajine

07.07.09 by Jackie

Tajine is a Moroccan dish that is named after the special pot in which it is cooked. It's a melting pot of savory and sweet flavors and it's a staple in Mediterranean cuisine. I love all its interesting ingredients like saffron, cinnamon, cumin, ginger, apricots and sun-dried tomatoes.

A lot of my cooking is my own improvisation. I went into the garden and found only 5 apricots that were fully ripe. We've had a lot of problems lately with animals like deer, squirrels and rabbits eating the fruits of Lulu's labor. Of course, this would have never been enough for a tart or preserve. I had a few potatoes, some sun-dried tomatoes and tofu. Eating them as is would have been an option but I thought I would use them to make a vegetarian tajine.

There was a lot of the leftover sauce, so I saved it to make a real lamb tajine stew the next day. All I have to do is run to the store and buy some lamb shanks.

Vegetarian Thai Tofu Satay with Peanut Sauce Recipe

In my quest to "share" as many meals as possible with my husband, I always try to make a vegetarian equivalent for him. I've done this successfully several times, like when I made curry tofu pot pie. Today, I created a veggie meal inspired by chicken satay.

The texture is pretty similar to that of the original, and the sauce is just as flavorful. Unseasoned tofu is a very bland ingredient, but it acts as a sponge and absorbs all the strong flavors of the sauce. If you've been scared to try tofu, this is a great place to start.
