Banh Mi Mam Chay (Vietnamese Vegetarian Sandwich Recipe) Recipe

A lot of Vietnamese dishes are inspired by French cuisine, because Vietnam was a longtime colony of the French empire. Bánh mì sandwich is an example of a dish that reflects the fusion of both cuisines. The sandwich consists of cilantro, fresh chiles, pickled carrots and usually a meat filling (grilled chicken, which is shredded meat with roasted rice powder) or sometimes a vegetarian filling, served on a baguette, spread with mayonnaise on one side and butter on the other.

For the veggie option, I normally fill the sandwiches with bì chay (shredded tofu with roasted rice powder). But this time, Aunt Danielle stopped by and we made mắm chay. She knows it's my husband Lulu's favorite, so she makes it very often. As I've said before, Aunt Danielle is a sweetheart and an amazing cook, except that she does not share her recipes. She used to run a successful restaurant in the early 90s. She taught me a lot of Vietnamese staple dishes to cook for the family until she found out about PhamFatale.com through her friends. I had to confess and she was not happy. It's funny; family and friends are a lot more reluctant to share their tips and secrets with me, so I have to do a little bit of recon and intelligence gathering.

In the end, Aunt Danielle hasn't entirely showed me how to make mắm chay. We prepped and mixed the ingredients together but she hid a few tricks from me. All I can tell you is that there are a lot of ingredients similar to bì chay involved, such as fried tofu, bean thread noodles, dry roasted rice powder (thinh) and seasonings (fried garlic, sugar and salt). What makes it different from bì chay is the addition of galangal (a type of ginger), young pickling cucumber, chayote squash (trái su su), ripe papaya, fresh pineapple and dried daikon radish cured in brine.

Even though the sandwich is reminiscent of the typical French jambon-beurre (ham and butter sandwich), bánh mì provides a taste of Vietnam. Lulu's been addicted ever since I first introduced him to the Vietnamese version, and if you try one, you will be too!

Cucumber Tea Sandwiches Recipe

Cucumber Tea Sandwiches

08.24.10 by Jackie

Cucumber sandwiches are the most delicious, easiest finger foods to make. All you need is sliced white bread, butter and of course, cucumbers. To enhance the flavor, I also spread a thin layer of parsley and garlic chive cream cheese spread.

We hosted a pool party today for Lya (my 13-year-old sis-in-law) and her classmates. I think everyone had fun, splashing in the water, chatting and reuniting right before school starts. They all seemed very hungry after swimming and the little cucumber sandwiches and other finger foods went fast!

Back to School Lunch Ideas: Fig Cheese Appetizer Recipe Recipe

My husband's youngest sister is starting 1st grade next Wednesday. We just met her new teacher and classmates during a lovely potluck picnic this week. Our first "homework" is to prepare a menu for her lunch box. She's very excited about what we will pack for her.

Our family friend Chú Quân had kindly just brought us humongous fist-sized figs from his garden. I immediately thought of a snack my little sis-in-law wouldn't be able to resist. This fig and cheese sandwich recipe is ultra simple. I pack separate containers of the ingredients (fresh figs, fig jam, camembert and pizelle anise cookies) and let her assemble the snack!

I'll be posting more B2S recipes next week as my little munchkin starts school, so stay tuned!

Cheese Sandwiches with White Kidney Beans Recipe

I always tell the girls that the most important ingredient for cooking is TLC. Making cheese sandwiches is no exception. There must be several layers that bind together properly for the sandwich to be a success. For this version (made for a picnic during our recent trip to Ashland), I had fresh strawberries left-over. So I blended the fruits into a purée and mixed it with cream cheese, sun dried-tomatoes and chives. I spread the strawberry cream cheese into cheese Kaiser rolls and topped it with cannellini salad, which provides the protein for the vegetarians in my family.

If you too are planning picnics with your family before school starts again, give this easy recipe a try. And if you're looking for back to school ideas for your children, this recipe might be it!

Turkey and Cheese Sandwich Recipe Recipe

Since I arrived in America 5 years ago, I've been searching for the best deli-sliced turkey and I think I've found my favorite one of all. My little munchkin is home from school until next week as she will attend summer school. She only eats turkey and cheese sandwiches, so that's what we had today for lunch, with a pack of potato chips.

I think I've spoiled her a little too much, as she prefers hot turkey sandwiches so the cheese is melted. For today’s turkey sandwich, I made a Mornay sauce, which is a white sauce made of flour, butter, mustard and milk. I also add a pinch of nutmeg to enhance the flavor. I smothered the bread with the sauce, stacked many layers of greens adn the turkey slices and voilà, lunch was ready.

For the vegetarians in the family, I made the exact same version using tofurkey slices. It's the perfect meal when you're in a hurry!

Note: The sandwiches pictured on the left are made with tofurkey and the ones on the right with real turkey slices.
