Thanksgiving Leftovers: Shepherd's Pie Recipe Recipe

Shepherd's pie is my way of turning two Thanksgiving leftover dishes into one beautiful, delicious meal. We always have excess mashed potatoes and turkey and this is a great way to give them a second (or third in the case of the turkey) life.

To start, I make a brunoise, which is a blend of same-sized and shaped diced leeks, turnips, carrots. Tomatoes and shredded leftover turkey are also added to complete the mixture.

Layered over the turkey brunoise is a generous helping of fluffy mashed potatoes. A sprinkle of Dubliner cheese seals the dish. Finally, shepherd's pie is baked until golden. Voilà!! I actually prefer this to the original roast turkey. It’s got such an intense flavor and a wonderful contrast of textures and colors. It may be called shepherd’s pie, but it is a dish fit for a king.

Turkey and Cheese Sandwich Recipe Recipe

Since I arrived in America 5 years ago, I've been searching for the best deli-sliced turkey and I think I've found my favorite one of all. My little munchkin is home from school until next week as she will attend summer school. She only eats turkey and cheese sandwiches, so that's what we had today for lunch, with a pack of potato chips.

I think I've spoiled her a little too much, as she prefers hot turkey sandwiches so the cheese is melted. For today’s turkey sandwich, I made a Mornay sauce, which is a white sauce made of flour, butter, mustard and milk. I also add a pinch of nutmeg to enhance the flavor. I smothered the bread with the sauce, stacked many layers of greens adn the turkey slices and voilà, lunch was ready.

For the vegetarians in the family, I made the exact same version using tofurkey slices. It's the perfect meal when you're in a hurry!

Note: The sandwiches pictured on the left are made with tofurkey and the ones on the right with real turkey slices.

Chicken Skewers Glazed with Kiwi Chutney Recipe

Kiwi chutney helps bring chicken to life by infusing the meat with sweet, tangy and spicy flavors. It's an exotic and flavorful twist on what could otherwise be a boring chicken dinner. I served the skewers with raita (yogurt sauce) and some more of the sauce made from the kiwi chutney. For the vegetarians in the house, I deep-fried tofu cubes, placed them on skewers and brushed them with kiwi chutney. Everyone got to share almost the "same" meal, which is very rare in my home.

I got the jar of kiwi chutney pictured below from our friend Laura. It's just one product in a long line of lovely creations that she has shared with us. Laura makes an amazing French marmalade, flavored with French vanilla beans. I don't have the recipe for the marmalade, but last year, she was kind enough to share her recipe for making vinegar on Pham Fatale.

If you don't have a friend like Laura, or can't find kiwi chutney at your local market, you can always try using other sweet chutneys such as mango or tamarind. No matter what, you'll have a tasty new chicken dish to share with your family and friends.

Croque Madame Sandwich Recipe Recipe

Croque Madame Sandwich Recipe

08.26.09 by Jackie

My little munchkin loved the croque-monsieur and she asked for the same lunch the next day. I decided to make another version of the same sandwich: the famous croque-madame. The croque-madame is essentially a croque-monsieur topped with a sunny side up egg.  If you ever get confused about which sandwich is which, just remember that the "female" version is just like the "male" version, but with extra flavor .

I added ketchup and flat-leaf parsley to create the face of an angry clown to make the sandwich kid-friendly and more playful. In case you were curious, she loved it!

For those of you who are wondering if the croque-mademoiselle exists, it does! It's supposed to be more delicate like a diet version, with whole wheat bread.

* I want to give a special shout out to Cookie and OysterCulture, who mentioned that they also make croque-madame at home.

Croque-Monsieur: A Perfect Back To School Lunch Recipe Recipe

In France, the croque-monsieur sandwich is as much a staple of school children's lunches as the PB&J is in America. I grew up with them, and they are still the ultimate comfort food for me.

The girls are going back to school today and I wanted to share with them one of the fondest culinary memories of my childhood. When I was in middle school, I would come home early on Wednesdays. Since I didn't eat lunch at school, I would always make myself a croque-monsieur.

Croque-monsieur is super easy to make. All you need is a few ingredients such as sliced white bread, emmental cheese and ham (I used smoked turkey). To make it fancier, I bind all the ingredients together with a Mornay sauce, which is basically a béchamel with cheese. I use béchamel a lot; it's really just a white sauce made of flour, butter and milk.
