Chinese Cabbage Salad Recipe Recipe

Chinese Cabbage Salad Recipe

03.08.11 by Jackie

This salad course is simple and very easy. I shredded a head of Chinese cabbage and mixed it with pickled onions, Vietnamese mint and pickled garlic. The mint enhances the flavor of the cabbage and gives it a fresh taste.

The best part is that this type of gơi (Vietnamese pickled salad) can be done very quickly and it's very low in calories. I'm attending a yoga class today, and this salad will keep me in a Zen state of mind long after the class is over.

Lentil Pasta Soup Recipe Recipe

Lentil Pasta Soup Recipe

02.18.11 by Jackie

My father-in-law, like my husband Lulu, is a vegetarian. One of his favorite meals is kali dal. Because of this, we often have leftover cooked black lentils. As usual, we still had some left last night, so I decided that this time it would not go to waste.

Lentils are packed with protein, so today I created a complete meal by adding pastina pasta and a few vegetables. For more contrast in color, you could add some greens such as spinach. I stuck to carrots, celery and leeks. The result is a delicious, spicy lentil pasta soup.

Easy Cheese Appetizer Recipe Recipe

Easy Cheese Appetizer Recipe

01.06.11 by Jackie

We're still in Paris and I've been feeling a little lazy as our vacation winds down. Maybe it’s a subconscious awareness that we’re about to go back to the daily grind. Still, we need to eat, and these cheese appetizers literally take about 10 minutes to assemble. This gives me plenty of time to do, well, other things.

I stacked cheese and sesame crackers, Rocamadour (goat) cheese, store-bought cherry preserves and sun-dried tomatoes into these little bites. They are so delicious, my husband Lulu could eat them by the dozen while waiting for dinner to be served.

The sweetness from the preserves and creaminess from the cheese pair wonderfully. You could make small variations using other chutneys or relishes as well.

Vegetarian Pot Pie with Lentil Pasta Recipe

If you’ve wanted to make comfort food healthy, this recipe is for you. As I've told you in the past, I often try to make vegetarian versions of the meat dishes I cook. One of my favorite dishes is chicken pot pie, and today I decided to make a variation of the dish with lentils and pastina pasta. I placed the mixture in mini soup bowls and covered them with puff pastry baked until golden and flaky.

The dish is fairly healthy, yet very flavorful due to the generous amounts of ginger, soy bacon bits, coriander, parsley and cilantro. The flavors and texture are spot on for a cold evening meal.

Whole Wheat Gnocchi Stroganoff Recipe Recipe

The term "stroganoff" is synonymous with beef, but for this dish I made everything vegetarian. I used the usual ingredients needed for the sauce, which originated from Russia: mushrooms, onions, shallots, vodka, sour cream, coarse-grain mustard and tomato paste, but I paired it with my homemade gnocchi. This was my first experiment with making gnocchi from whole wheat flour. To ensure that the pasta turned out moist and to enhance the flavor, I added goat ricotta cheese.

If you have a vegetarian in the house as I do, finding an alternative to meat dishes isn't as complicated as it seems. Try this recipe, and you'll agree.
