How to Make French Madeleine Cookies (Video) Recipe

 I love madeleine cookies. I love them so much, I probably make them at least once a month. They're a great snack and I always have someone in our home to enjoy, especially for guests that stop by for tea time. Believe me, ours never go to waste. 


My friend Zareen recently opened her new restaurant, aptly named Zareen's, on 1477 Plymouth in Mountain View. She serves delicious Pakistani/Indian kebabs and various scrumptious goods. She asked me if I'd be interested to make desserts. I rolled up my sleeves and jumped into her kitchen. Almond Chocolate Cookie Cake Pie Recipe Recipe

Have you ever cooked a turducken? In case you don't know what a turducken is, it's a deboned turkey stuffed with a deboned duck stuffed with a deboned chicken. Turduckens are usually stuffed with breadcrumb dressing. Well, the idea for this elaborate dessert is smilar in concept,  but a sweet version. I wanted to layer one dessert into another and create a special, sweet treat: a cookie cake pie.

Somehow I managed to wrestle the whole thing together and came up with a dessert that I think made sense. It consisted of an almond passion fruit cheesecake inside an almondine tart, which is stuffed into a vanilla chocolate slivered almond cookie pie and finally layered on puff pastry dough.

I rarely make exactly the same dish twice. Once you've worked on your fundamentals, you can start to use the basic recipe and create dozens of different variations. This unique dessert is a true reflection of my cuisine. I love experimenting with new dishes and seeing my loved ones enjoying the fruit of my labor. Now all I need is to come up with a clever name for this unique dessert!

Chocolate Chip Cookie Pie Recipe Recipe

Baking can never go wrong as long as you follow a few simple rules: use the best quality ingredients, carefully measure accurate quantities and bake at the correct temperature and cooking time. Sunny, my 18-year-old sister-in-law, has made her signature cookie pie so many times, I bet she could prepare this with her eyes closed. She keeps everything very simple using quality butter, organic brown eggs, unbleached flour, pure vanilla extract, Ghirardelli semi-sweet chocolate and unsulfured, blackstrap molasses (the dark, viscous kind has the highest possible extraction of sugar from raw sugar cane).

Speaking completely objectively on the subject , this is the best cookie pie ever made. We were lucky Sunny prepared 4 batches for our family brunch this weekend. The freshly baked goods were so scrumptious: sinfully rich and soft with gooey pockets of melt-y chocolate. True perfection!

Salted Caramel Milk Chocolate Chip Cookie Recipe Recipe

I haven't been active for the past week on PhamFatale.com. We've spent a crazy holiday season, baking a ton! Here's one of the many chocolate chip cookie versions we made during the week. We used chocolate we received over Christmas, so these feature M&Ms and chunks of coarsely chopped Godiva salted caramel milk chocolate bars.

The secret to perfect texture for this timeless classic is to closely watch the baking time. Don't over-bake them but also don't under-cook them or you'll end up with just cookie dough! Happy baking!

Peanut Butter Chocolate Cookies

The girls and I have been baking up a storm this holiday season. Here's the recipe for their favorite cookie from this week’s concoctions. We made them without flour, butter or white sugar. The only requirement is the use of a generous amount of peanut butter, brown sugar and a few Christmasy-colored chocolate chips. The result was super gooey, soft and pillowy cookies.

The girls suggested we bake as many varieties of cookies as possible until Christmas Day. I can already tell what my New Year’s resolution is going to be!
