Spicy garlic chutney is meant to knock your socks off. I used Anaheim peppers which are mildly hot; you can decide on the level of spiciness by using hotter peppers such as Serrano peppers. If you're really masochistic, habanero or scotch bonnets would work as well. On the other hand, if you're like me and can't handle spicy food, you could use green bell peppers instead. 

This Indian chutney is a great condiment for subtly flavored dishes such as fish en papillote, meat, Indian potato cutlets, basmati rice and dahl or even a piece of toast. It's also very healthy for you due to the large quantity of fresh garlic. We make this chutney very often, as it stores well in the refrigerator. The only no-no would be to serve it during a romantic dinner !!

Beef Shami Kebab

Shami kebabs are made with an abundance of fabulous spices, meat (beef, goat, lamb or chicken) and chana dal (dried garbanzo beans). The spices vary depending on whether they're from India (Lucknow or Hyderabad) or Pakistan. My husband Lulu's family is from Hyderabad. They're all meat-eaters, with the exception of my husband and father-in-law. So we often make this dish when we have family over for dinner.

These are not your average kebabs. The meat is cubed and cooked in a pressure cooker with chana dal, and once cooked, it's ground in a food processor with yogurt. The resulting mixture is formed into "hamburger" patties that can be frozen or seared, depending on when you plan on eating them.

I learned this recipe from Baji, Lulu's late grandmother. She was an excellent cook. When Lulu and I first got married, she was already giving us hints.

"Jackie, I'm going to teach you a meat specialty from my hometown. They're called Shami Kebabs; they're spiced hamburger patties. This recipe is a must-have when you two have little children. It's nutritious and easy for little ones to eat. Speaking of which, when are you going to give me great grand-children so I can feed these kebabs to them?"

I would always smile, nod and pretend I didn't hear the part about having kids. Don't get me wrong, we'd love to start a family, but the pressure was a little overwhelming. Lulu's grandmother isn't with us anymore, but I promise that I'll make this for my kids when I have them, assuming they don't become vegetarians like Lulu (fingers crossed).

How to Make Super Moist Cornbread Recipe

In France, almost all breads are wheat flour-based, so my first experience with cornbread was a real treat. I love the sweetness of the corn. The texture, when prepared properly, is fluffy and light, but all too often I've had cornbread that was overly dry and crumbly.

After much experimentation, I've created an ultra moist cornbread recipe that is also easy to make. As proof, the cornbread you seen in the pictures was made by my 13-year-old sister-in-law, Sunny. I gave her the recipe last night and this morning she cooked it from scratch on her own.

For flavor, I added both pickled and roasted jalapeños and parmesan cheese. I think these ingredients are the best complements to the natural sweetness of the corn. You could also add finely chopped nuts or chopped dried cranberries if you wanted a more sweet / tart flavor.

If you're feeling a bit apprehensive about preparing homemade cornbread this year, just remember, if a 13 -year-old can do it, so can you.

Vegetarian Tortilla Soup Recipe

I had 5 tortillas left-over from the burritos we made over the weekend that were going stale, so I decided to make a large pot of tortilla soup. I use the tortillas as a thickening agent in the soup, and also as a garnish on top of the dish. To the tortillas I added tomatoes and tomato paste for a little tartness, jalapeños for a little heat, and some kidney beans and soy chorizo for protein.

The spices give the soup an earthy flavor and the Cotija cheese and sour cream that I top each serving with are very soothing for the taste-buds.

Tortilla soup is a really hearty dish that's the perfect cure for the dreary weather we've been having here as of late.

If you've ever wondered how to make the cheese sauce that accompanies a few handfuls of tortilla chips at countless movies theaters and sport venues, then look no further. You don't have to melt down a block of fake cheese to make your own version. Instead try my cheddar bechamel with jalapeños.

I decided to share this with you today in anticipation of the Superbowl this weekend between the Steelers and the Cardinals. I have to admit that I hate football. It's definitely not part of French culture. To be fair, I've never really taken the time to listen to my hubby's countless attempts to explain the rules of the game. It's so cute when he tries! At least I can get excited about the food...
