Mango and Coconut Yule Log Cake (Buche de Noel) Recipe

Bûche de Noël is known by many names. Whether you call it a Yule Log, roulade or simply a roll cake, few desserts are as synonymous with Christmas. For this recipe, the roll cake I used is a simple, coconut-flavored génoise. It's basically a sponge cake. The filling is a mango and rum ganache and I made a chocolate rum butter-cream to cover the log.

When I was a kid in France, we used to buy a Yule Log every year. It may seem strange, but the flavor we would always get was mango. It's like a warm tropical breeze on a cold winter night. Though mango is clearly not a traditional holiday flavor, once you try this Bûche de Noël, you won't go back to vanilla and chocolate.

Chocolate Macadamia Brownies with Pumpkin Cream Recipe

The base of the dessert is a layer of chocolate macadamia brownie. I filled the rest of the bowl with a pumpkin cream made with mascarpone cheese. It has a light and creamy texture that is the perfect backdrop for the decadence of the brownie. To top off the dessert, I added some whipped cream dusted with cinnamon. A few brownie crumbs make a nice final touch, as well as sign of what's to come as your spoon cuts through the pumpkin cream.

We love brownies and make them more often than we probably should, but until now I've never served them to guests. This was my attempt to dress up a brownie into a dessert that could be served at the end of a nice dinner party. I'm happy to report that the dessert went over very well. Brownies have an incredible ability to turn anyone who even looks at them into a kid again, and it was a wonderful way to end an elegant meal.

Mango Mousse Recipe

Mango Mousse

12.16.09 by Jackie

After making mango lassi, I add some leftover mango pulp and I had a tin full of ginger snaps from yesterday. I knew I was onto something decadent. I ran to the grocery store and got some heavy cream and some white chocolate. At the store, it occurred to me that the lemon apeels (lemon-flavored chocolate chips) would give the dessert more flavor than plain white chocolate.

So what could I make with all these lovely ingredients? The answer is an egg-free mango mousse flavored with lemon apeels and garnished with homemade ginger snap cookies.

Mandarin and Ginger Sandwich Cookies Recipe

Using the same sugar cookie dough I used for the pinwheel cookies, today I made mandarin and ginger flavored sandwich cookies. The flavor is repeated in the cream as well, and to give the treats a holiday vibe I topped them with green, red and white Christmas sprinkle toppings.

I know it's the holiday season when the citrus trees in our garden start producing copious amounts of fruit. I took some Chinese mandarins from the garden to make these cookies. They were so incredibly fragrant and sweet that after eating all the segments, I couldn't throw away the zest. I think they were put to good (and delicious) use!

Matcha Green Tea Creme Brulee Recipe

Matcha Green Tea Creme Brulee

12.09.09 by Jackie

This dessert combines two of my favorite things, crème brulée and green tea. I love the natural jade color of matcha green tea powder, along with its distinctive flavor. It's an ingredient I use a lot in desserts. Whether it's in cookies, madeleines, pound cakes, crème pâtissière or chocolate truffles, the result is always a success.

My personal favorite application for green tea powder though is crème brulée. One could probably add spinach to crème brulée and it would still taste great, but there's something special about the flavor of green tea that cuts the decadence of the dessert while enhancing its elegance.
