Pumpkin Creme Brulee Recipe

We recently hosted a dinner party and I wanted to bring a little flair of the Fall season. With Thanksgiving coming, I decided to make a pumpkin crème brûlée. I would consider myself an expert when it comes to make these cute French desserts. I've made crèmes brûlées so many times (lavender, banana, cherry, masala chai, green tea, lemon, chocolate, vanilla, butterscotch), I could make them with my eyes closed, except the brûlée part . That would end badly, I’m sure.

The result was predictably delicious. Crème brûlée flavored with just about anything tastes great, but that doesn’t give you license to make a turkey-flavored version. If it was made savory though, it might be interesting. Something to think about. At any rate, pumpkin crème brûlée is a familiar, yet fresh take on Thanksgiving dessert that deserves a place at your dinner table.

Ghost Pumpkin Cupcake Recipe

Pumpkin cupcakes are another Halloween treat I took to my little one's school along with the witch finger cookies. I made the cupcakes with pumpkin cake batter studded with chocolate chips, and finished them with swirls of ghost-shaped frosting.

The ghost cupcakes were a complete success – 20 kids finished 36 treats. I think it's partially because the witch finger cookies were too scary-looking for 1st graders. I noticed a little girl looking for a smiling ghost and not a frowny-looking monster. Note to self: next year, make less creepy-looking Halloween treats!

Witch Finger Cookies (Scary Halloween Food) Recipe

This recipe gives “finger food” a whole new meaning. My 1st-grader sister-in-law is going to participate in the Halloween parade at her school, and I thought it would be fun to bring some scary treats to share with her classmates. After deliberating with the munchkin, we decided to make finger-shaped cookies.

To start, I made the first batch of cookie dough with a few drops of pandan extract to give the cookies a green color. My munchkin helped me out shaping the fingers but we realized they were shaped way too big as they expanded after baking. I exclaimed: "Those are Shrek's fingers!" to which my little one responded: "Why would you chop off Shrek’s fingers?!?!". After calming her down, we settled on calling them “witch” fingers. I made the second batch much smaller with less pandan to make it more realistically like a witch's skin (I'm just guessing since I've personally never met one). The fingernails are made of candied blanched almonds and the fingers are dipped in fruit preserves to imitate blood.

The finger cookies look very realistic, so I don't know if they're appropriate for 6-year-olds. I’ll tell you tomorrow what the reaction was.

Stuffed Dates with Pistachios

Mascarpone stuffed dates with pistachios is a versatile and easy no-bake dish. It makes a great dessert, appetizer or snack. On top of that, the dessert is so easy to assemble my 6-year-old little sis-in-law can do it!

I used Deglet Noor dates because the texture is firm and thick without tasting overly sweet. This makes them perfect for appetizers. For a sweeter version, you could use Medjool dates.

To make the dish, I pitted the dates and filled them cannoli-style with mascarpone cream. Crushed pistachios add texture, flavor and color. I placed the stuffed dates on a bed of thin butter almond cookies to enhance the presentation and make them easier to handle.

Fig Crumble Dessert (Fruit Crumble Recipe) Recipe

Making fig crumble is very simple. The ratio is very easy to memorize; just combine equal parts by weight of flour, sugar and butter. To enhance the fig flavors, I caramelized the figs in butter and sugar and mixed a little bit of fig compote at the bottom of each cup. I think crumbles are best eaten warm with a scoop of vanilla ice cream. I served them in individual small dessert cups for portion control, but I think it just tempts everyone into having seconds.

I was really excited to make this dessert, because all summer I've been waiting to use the figs from our garden. I try to wait until the fruits are ripe before harvesting them, but between the birds and the girls, there are almost none left on the trees. Today, I woke up in the wee hours of the morning to grab a few figs for the crumble. I’ll try again in a couple of days, so stay tuned for another decadent fig dish!
