Ginger Rice Pudding Recipe

04.07.11 by Jackie

The last time I made mango rice pudding, the little one of the family (she's only 6 years old) complained that she didn't get any. I promised her I'd make some more the following day but I kept forgetting. I finally had time to make some rice pudding today, which I flavored with fresh ginger. Ginger is a very versatile ingredient that can flavor either drinks, savory dishes or desserts.

If you want to serve this at the end of a dinner party, I would recommend using tuile bowls filled with a layer of ginger chocolate mousse and topped with the ginger rice pudding. It's a great way to serve traditional family desserts and turn them into elegant desserts.

In case you were wondering, I made sure everyone got their fair share of rice pudding this time. That means I’m going to have to find a new excuse the next time I have a craving for rice pudding!

M&M Cookies with Toffee Peanuts Recipe

M&M Cookies with Toffee Peanuts

04.04.11 by Jackie

It might sound strange, but in my opinion, making cookies is like making risotto. What I mean is that in general, you shouldn't use too many chunky ingredients to accent the cookie dough. I typically make use of whatever I can find in my pantry, and this time I limited the additions to coconut toffee peanuts and M&Ms.

The M&Ms came from a package of goodies from Rutgers University. My father-in-law was inducted into Rutgers Hall of Distinguished Alumni a few years ago and has stayed close to the school. The colors of the Scarlet Knights are faithfully represented in the M&Ms, and I think they add a nice touch of color to the cookies while showing off some school spirit. Thanks, Dean McCormick!

Blueberry Crepe Recipe

As I told you yesterday, I made crêpes as an experiment to see how well they keep in the freezer. Unfortunately, the crêpes haven’t been able to make it to leftover status, and here's a big part of  the reason why. After making savory crêpes filled with beets and goat cheese, we filled the remaining crêpes with blueberries, vanilla whipped cream and guava sauce. Needless to say, they went fast!

Crêpes are a quick and easy dessert if you can manage to store some in the freezer. If you are looking for a sweet way to end dinner, just pair crêpes with fresh fruits, chocolate sauce, other fruit preserves and whipped cream (or yogurt). You just can’t go wrong.

St. Patrick's Day Greenies (Green Brownies Recipe) Recipe

Is there a better ingredient than pandan paste to create a dessert symbolizing St. Patrick's Day? This evening, I used it to make "greenies". Instead of the semi-sweet or dark chocolate brownies traditionally call for, I used white chocolate and flavored the gooey dessert with pecans and a generous amount of pandan, which creates a beautiful green color.

It’s a sweet treat that would make a leprechaun “green” with envy. Sorry, couldn’t resist.  Happy St. Paddy’s Day everyone!

Mango Rice Pudding Recipe Recipe

Mango Rice Pudding Recipe

03.10.11 by Jackie

Today, there were no eggs, fresh fruit or flour in the kitchen. I was able to find sugar, a can of Alphonso mango purée, sweet Asian rice and a few cups of milk. Rice pudding is my go-to dessert whenever my pantry is running on empty, and I found just the right set of ingredients to make a batch to satisfy my sweet tooth.

First, I boiled the rice in water, drained it and slowly cooked it in milk until tender. Once the rice was cooked, I sweetened and flavored it with the delicious mango purée. I couldn't stop there, so I finished the rice pudding with a little crème fraîche for extra creaminess and created a sugar crust, crème brûlée-style. All I can say is, yum!
