Orange Pecan Pie Recipe Recipe

Orange Pecan Pie Recipe

11.20.12 by Jackie

During Thanksgiving, we usually end up so full that we don’t eat the desserts until the following day. This year I'm planning on serving miniature pecan pies so everyone can enjoy the dessert on Thanksgiving Day. Pecan pie is my husband Lulu’s favorite Thanksgiving treat, and I hope he enjoys this version flavored with orange and date syrup. The key to any pecan pie is to overload the pecan flavor, which is my primary objection to  the ones sold in bakeries. The reason is probably that pecans are so expensive.

The citrus flavor comes from the combination of orange concentrate and orange peels. It gives the pie just a hint of tartness to cut through what is admittedly a very sweet dessert. So this Thanksgiving, consider going mini for your desserts. You and your guests will love them!

Pumpkin Creme Caramel Recipe Recipe

Pumpkin Creme Caramel Recipe

11.19.12 by Jackie

If you saw last week's dessert recipe, you know I made a French-style pumpkin flan for my husband Lulu. He had asked me to make a flan, which in his mind meant crème caramel, but instead I made a flan pâtissier (French pie crust with pumpkin custard). I always try to keep my promises, so here's the pumpkin crème caramel, which Lulu loved.

His favorite part is the caramel at the bottom of the cup. You could serve it as is, or flip the dessert onto a plate so the caramel drips all over the "flan". I photographed it in both serving styles so you can decide which you prefer.

Three days to Thanksgiving (or four days to Black Friday, depending on your priorities )!

French Pumpkin Flan Recipe (Flan Patissier) Recipe

My husband Lulu loves it when Thanksgiving rolls around, because it's usually the time of the year when I experiment with new desserts. He often makes suggestions, and always selflessly volunteers to be the taste-tester.

His latest suggestion was a pumpkin-flavored flan. Lulu tends to forget that I was born French. A "flan pâtissier" in France is a pie crust called "pâte brisée" filled with custard made of egg yolks, milk, cream, sugar, cornstarch and vanilla beans. So that's what I made, with the addition of pumpkin, of course.

I told Lulu he would be eating flan for dessert. Once he finished it in the evening, he smiled and said: "All day long, I was looking forward to pumpkin-flavored crème caramel. I loved this French-style pumpkin custard pie, but can I have a pumpkin crème caramel tomorrow?" I hope my daughter doesn't end up so spoiled! And in case you were wondering, I am going to make the crème caramel today...

Bourbon and Caramel Tiramisu Recipe Recipe

Tiramisu is one of our family's favorite desserts. In the past, I've made individual servings in cups as well as larger cakes. I've also played around with the flavor combinations. This time around, I prepared a tiramisu with salted caramel and Bourbon. For the cookie part of the tiramisu, I used liquor-soaked bite-sized wafers.

The result is an airy, delightful mousse with a hint of alcohol, which makes the perfect sophisticated dessert for adults.

Chocolate Bat Cookies (Halloween Breakfast Recipe) Recipe

Halloween is a few days away and I've been preparing little sweet treats in anticipation of the event. For breakfast, I baked bat-shaped chocolate wafers that I paired with sweetened yogurt and fresh figs from our garden. The result is divine; the crunch from the cookies balances out the smooth texture of the yogurt, and chocolate and figs work beautifully together.

I'm going to be baking a lot more scary-looking pastries until Halloween, including my witch's fingers, funny-looking sunny side up eggs and ghost-shaped pancakes. If you have other suggestions, feel free to send me a message!
