French Macarons flavored with Cherries  Recipe

After posting recipes for almost 5 years, I realized I had never paid homage to the most famous French pastry: le macaron. Today is my attempt to correct this oversight. I made cherry-flavored macarons since this delicious red fruit is finally available in the market.

Making this delicate confection is very time-consuming but so rewarding. I'm not as good at it as I would love to be. They really should rise a bit more in volume, but the meringue still looks decent and the taste is there. The elements of the macaron are egg whites, powdered sugar, granulated sugar, almond flour and a bit food coloring. This assembly is also tricky as the shells can be crushed very easily. I simply add a small mound of cherry-flavored white chocolate ganache and then holding them by the base of the cookie, gently press the two shells together against each other to form the beautiful sandwich cookie

Raspberry Thumbprint Cookie Recipe Recipe

We're a large family and we often have surprised guests. I'm always prepared for this possibility and have uncooked cookie dough or individual dessert cups ready in the freezer. Today was no exception. I used already-rolled almond cookie dough that I simply popped in the oven for 10 minutes, rotated the tray, pressed them to create a cavity and continue baking them for exactly 8 more minutes. Then, I filled the formed thumbprint cookies with hot vanilla raspberry preserves.

I served the cookies with masala chai and a tray of fresh raspberries and freshly cut pineapples. Voilà‎: tea time is served!

Vol au Vent Filled with Cherry Ice Cream Recipe

I love the combination of dark Morello cherries and balsamic vinegar. Since I have balsamic cherry vinegar from Bellindora on hand, I thought I would use the pairing in a dish. I made cherry vol au vent drizzled with Bellindora balsamic cherry chocolate sauce. If you've had balsamic syrup with fruits in the past, you will certainly love this uncommon flavoring as the balsamic cherry vinegar brings out the flavor of the sweet cherries. 

The vol au vent consists of a puff pastry cup that is formed using two different sizes of cookie cutters. I filled it with homemade dark Morel ice cream. As you can see from the photo, I should have been more patient and waited for the ice cream to harden a bit in the freezer and not transfer the churned cherry ice cream directly from the ice cream machine to the cooled puff pastry. Horchata Cookies with Queso Fresco Recipe

If you've been keeping up on my recipes this week, you know that I've been making use of the wonderful cheeses from Queso Del Valle. I thought a dessert would be a nice way to end the week. Lulu and I had lunch at the appropriately named "Lulu's" Mexican restaurant last Sunday, and we both enjoyed a nice cup of horchata (cinnamon-flavored rice drink). I thought it would be fun to capture the rice and cinnamon flavors of the drink in an edible form.

I made cookies with queso fresco and incorporated sweetened condensed milk, horchata, almonds, rice flour and cinnamon. I didn't stop there and topped the moist cookies with cinnamon and crema Mexicana sour cream icing. 

These horchata cookies turned out great and I might whip another fusion dessert before the weekend is over. How do profiteroles filled with Mexican vanilla-flavored queso fresco and crema Mexicana sour cream sound? I think it would be even more luscious if the profiteroles are drizzled with dulce leche. Mmmm...

Mocha Thumbprint Cookie Recipe

Baby Aria is very similar to my husband Lulu when it comes to her favorite foods. She loves vegetables and she adores sweets. Today I experimented with a batch of cookies I usually make when we have guests over for tea: thumbprint cookies. They're so pretty, especially with the crackle effect on the shortbread cookie dough and the whimsical design in the center indentation that almost resembles a crazy eye.

I flavored the cookie dough with cocoa powder and mocha paste. I filled them with vanilla chips and a drizzle of bittersweet chocolate, which came out just as great. Have a wonderful weekend and I look forward to sharing recipes next week in anticipation of Cinco de Mayo!
