South Indian Spicy Nut and Puffed Rice Snack (Chudwa) Recipe

Chudwa, sometimes called chevda, is for South Indians what trail-mix is for us. It's a blend of nuts, dried fruit, puffed rice and various typical Indian spices.

It's very easy to make, but like eggrolls, it's time-consuming. It's a big production. One of my sisters-in-law is in charge of assembling the ingredients. My mother-in-law is the one frying the puffed rice flakes. One other sister's job is to sprinkle the spices as soon as the ingredients are out of the oil. My job is to toss the whole thing and, last but not least, the other 2 younger sisters' job is to taste.  It's a tough job, but somebody has to do it.

Sweet Mascarpone and Berries with Lemon Ganache Recipe

If you're looking for a fast and easy yet elegant dessert recipe, this one is for you. I usually make this dessert to please my little 9-year-old sister-in-law who is allergic to eggs.

The rich cinnamon-flavored mascarpone mixture with the refreshing combination of blackberries and blueberries makes a very festive sweet treat for little kids and big kids as well.

To give more body to the dessert, I sprinkle a layer of coarsely-crumbled Italian puff pastry and top with a layer of lemon ganache. The result is to die for!

Coconut and Sweet Tapioca Pudding with Bananas (Che Chuoi in Vietnamese) Recipe

Today, my local Asian market carried Vietnamese sweet bananas called chuối xiêm. Chuối xiêm are small, thin-peel bananas that are sweet and very flavorful when they are ripe. I made some coconut and sweet tapioca pudding with the bananas, called chè chuối xiêm in Vietnamese.  

Vietnamese desserts are not always the prettiest-looking sweets, but they are very good. They are composed of ingredients different from Western desserts and might look unusual at first. A lot of traditional Vietnamese desserts are made from sticky rice or other starches like cassava

Red Bean Salad served with a Spicy Cilantro Vinaigrette Recipe

Red bean salad is such an easy dish to make. All you have to do is toss some red kidney beans, shredded pickled carrots, corn kernels and other colorful veggies and you're ready to please a large crowd. It's an especially good complement of proteins for vegetarians. Just serve with crostini (thinly sliced grilled bread drizzled with olive oil) or garlic bread (for the carb) and you're ready to go.

I got inspired by Chrystal and Amir, the wonderful folks from The Duo Dishes.  They created an amazing flavorful spicy cilantro vinaigrette that I thought would go perfectly with my salad.

Indian Butter Chicken in Tomato Cream Sauce (Murgh Makhani Curry) Recipe

Murgh Makhani is a moist tender chicken in a pink sauce. The pink sauce is a blend of butter (mmm... butter!), heavy cream, tomato sauce, lime juice, almond flour and a few spices. The tenderizing process is similar to my soy sauce roasted cornish game hen.

Murgh Makhani is usually served with naans (Indian round fluffy bread made of white flour), basmati rice or some roti (flat Indian wheat bread).

First, I marinate the chicken overnight in a papaya and yogurt mixture. It's the best way to tenderize the meat.
