Olivier's Grandma's Pithivier Dessert Recipe Recipe

If you follow the blog, you've probably noticed the "pithivier cake" cooking tutorial my childhood friend Alexia, her husband Olivier and I filmed during their visit to Silicon Valley. We've received great feedback, but many of you asked for the recipe in print for easier readability. So without further ado, here it is. 

I've baked another pithivier; they're so easy to assemble (we've made four already since I learned Olivier's grandma "Mamie Françoise's" 1930s award-winning pithivier cake recipe). It originates from the small town of Pithiviers, in the Loiret département in north-central France where Olivier grew up. As we mentioned in the video, "shhh," this recipe is a secret! It's only made with almond flour, eggs, sugar and oranges. There is no butter; the richness comes from the abundance of almonds in the batter.

Authentic Pithiviers Cake (Award Winning Recipe) Video Recipe
My childhood friend Alexia and her husband Olivier are visiting. Olivier is an amazing cook and I've had the privilege to learn his grandma "Mamie Françoise"'s secret Pithiviers cake recipe. A Pithiviers is a cake made of almond flour, eggs, sugar and oranges. It originates from the town of Pithiviers, in the Orleans area of France, where Olivier and his family are from. According to his grandmother, there are many variations of this original classic French dessert but this one is the authentic recipe. The traditional version calls for candied fruits on top (fruits confits in French) and absolutely no top puff pastry crust. It is best eaten after resting for a few days. I can't tell you how long the baked Pithiviers can be stored because it didn't last long in our home! Whether you're a beginner or a professional pâtissier, this Pithiviers cake is easy to make at home, once we let you in on the secrets of this authentic recipe. Follow the instructions from this video and you'll have the pleasure of eating this moist cake that won the Pithiviers cake contest back in the 1930s. Mamie Françoise was the proud winner!

Lentil Stuffed Portobello Mushroom Recipe Recipe

I'm presenting to you another vegetarian recipe for Meatless Monday. I pan-seared Portobello mushrooms that I stuffed with lentils and various colorful vegetables.

Our family is heading to Europe this summer and I'd like to be able to fit into a bikini this season, so this hearty, yet super-healthy dish will not only satisfy our taste buds but will also help us look trim in a few weeks. 

The recipe is gluten free because we recently found out my mother-in-law is gluten intolerant. I served the mushrooms with pan-fried polenta medallions and garnished the dish with crumbled French feta cheese.

Mushroom Potato Galette Recipe

Sometimes the simplest things make the most delicious dish. For this vegetarian recipe, I only used 3 ingredients plus seasonings and tried to showcase them in one easy dish. Red potatoes from my garden, button mushrooms and ghee (clarified butter). Very thinly sliced potatoes were arranged into a galette and stuffed with mushrooms. That's all. I also flavored the ghee with oregano and seasoned the potatoes with salt and white pepper.

It's amazing how easy it is to grow potatoes: bury the potatoes into the soil 3 weeks before the last "frost" date. For the Bay Area, I usually wait until late March. Remember to water regularly. You'll be able to harvest the first potatoes when the flowers open up. Check back often; the main part of the plants should be pulled once the foliage has died.

Muhammara and Cucumber Bites (Healthy Appetizer Recipe) Recipe

I created these irresistible appetizers for the California Lavash team a while back. It was their idea to combine muhammara (walnuts, charred red bell pepper, fresh pomegranate seeds and mint flavored spread), cucumber, dill, mint and cilantro in their fabulous, healthful lavash flatbread. 

Being the ultimate hostess, in my opinion, requires the art of not only making delicious food but also creating enticing and delectable bites to make sure you please all your guests. I formed twirling portions, which is ideal if you're serving a small number of people. If you're hosting a large party, I would suggest rolling regular pinwheels to save time.

I think this type of food is especially appealing to female guests. The colors are striking, almost bewitching. The appetizers have a lot of flavor, yet are super healthy. If you're looking for store-bought muhammara, I highly recommend Haig's. But if you don't want to be too adventurous, you can replace the pomegranate spread with others such as crumbled feta and chopped olives mixed with Greek yogurt and lemon juice and substitute a touch of oregano for the mint.
